Ingredientes: - 400 gr calabaza cocida o asada - 200 gr azúcar blanquilla - *150 gr azúcar moreno - 4 huevos M - 280 gr aceite girasol - 400 gr harina floja - 1 sobre levadura química ( tipo royal ) - 2 sobres gasificante compuestos cada uno por un sobre de bicarbonato y uno de ácido tartárico - Azúcar y canela para espolvorear * Para los mas dulzones podéis poner la misma cantidad de azúcar blanquilla y azúcar moreno, es decir, 200 del blanco y 200 del moreno. Preparación: 1. Empezamos cociendo o asando la calabaza. En mi caso la he cocido en thermomix. Hay que tener en cuenta que si necesitamos 400gr de calabaza para utilizar en la receta, deberemos poner a cocer una calabaza que tenga un peso superior, es decir de 500 gr aproximadamente, ya que en la cocción siempre pierde un poco de peso. Para cocer la calabaza, introducimos en el vaso 500 gr de agua, Seguidamente colocamos el cestillo dentro del vaso, con la calabaza pelada y cortada en dados no muy grandes para facilitar su cocción. Programamos 30 minutos, temperatura varoma, velocidad 1. Una vez finalizado el tiempo comprobamos si la calabaza ya está en su punto o todavía le falta un poco, en ese caso programaremos unos minutos mas, hasta conseguir el punto óptimo de cocción. 2. Retiramos el cestillo del vaso, desechamos el agua sobrante que hemos utilizado para la cocción y vamos incorporando la calabaza, los azúcares, los huevos y el aceite.Batimos 1 minuto, velocidad 6. 3. Añadimos la harina, los sobres de gasificante ( dos de bicarbonato y 2 de ácido tartárico ), el sobre de levadura química y canela al gusto. Mezclamos 30 segundos, velocidad 6. Terminamos de envolver la mezcla con una espátula por si ha quedado algún resto de harina sin mezclar en las paredes del vaso. 4. Vertemos la mezcla sobre un molde forrado con papel vegetal. Espolvoreamos al gusto con una mezcla de azúcar y canela. 5. Introducimos en el horno precalentado y horneamos a 180ªC durante 25 minutos con la función solo aire. Pasado el tiempo comprobamos su punto de cocción con una brocheta o cualquier otro utensilio dedicado a la misma labor. Desmoldamos la coca y dejamos enfriar sobre una rejilla hasta que enfríe. Es una coca de llanda diferente a la convencional, muy fácil de hacer y con un resultado excelente debido al toque de sabor característico que le proporciona la calabaza, os recomiendo que la probéis.
