Baingan bharta is THE eggplant dish that will make you fall in love with eggplant! It's a smoky eggplant mash mixed with a flavorful blend of garlic, ginger, spices, and tomatoes. Choose from the traditional method for the best results—smoking whole eggplants on an open flame—or the sauté method for something a little easier.
Recipe video above. This is a bewitching green salad adapted from Yotam Ottolenghi's wildly popular cookbook Jerusalem. It calls for a LOT of fresh chervil and tarragon and it takes time to pick the leaves! Worth the effort to experience the unique combination of flavours when combined with the earthy golden garlic-cumin-coriander dressing.Eastern Mediterranean / Middle Eastern flavours with a touch of French. It's very, very good!

This eggplant and walnut pasta sauce is one of my favourite homemade vegan pasta sauce recipes. The white sauce is loaded with flavour bombs like shallots, garlic, lemon, miso, and perfectly charred eggplant. Top with spiced breadcrumbs for that added crunch!
Recipe video above. This curry is not for the faint hearted! Eggplant (Brinjal) stars in this strong flavoured curry, roasted rather than fried for a healthier yet equally delicious (high temp does the trick here), then simmered in an intensely spiced South Indian curry sauce so it sucks up the flavour and partially collapses to create a big pot of juicy (delicious) mush. Incidentally vegan (as much of South Indian food is). See recipe notes for subs for the harder to find spices. And when you've made this, use the same spices to make this Vegetable Samosa Pie!Spiciness: Pretty mild. Spiciness only comes from the chilli powder so if you're concerned, skip or reduce it!
Experience a taste of Southern goodness with our Tennessee Onions recipe. Made primarily with sweet Vidalia onions, a trifecta of cheeses, and savory butter and herbs, it’s a mouthwatering side dish you won't want to miss.

I find this very special bowl, a fragrant curry of sorts, is the vegetarian equivalent of a chicken noodle soup, both for comfort and health benefits. Add more coconut cream or milk if you would like more of a soup-y feel; the recipe here provides more of a sauce at the base of the bowl. Curry leaves can be tricky to find fresh, but are transformative; try Asian food shops, large supermarkets and the internet.
This easy and healthy homemade soup with vegan dumplings is tasty, and comforting. Bonus! You won't spend all day in the kitchen making this.
I’ve been sitting on a pretty rocking broth recipe for a while, that sips like it’s decadent long-simmered ‘bone’ varieties, without using anything of the sort. This golden concoction is natures gift off flavour and nutrients, with a powerful lineup of plant-based ingredients that do wonders for the body. Priority for this soup was to be so rich...

Every other Saturday during my childhood, we would have this soup or a variation of it – sometimes with angel-hair noodles or egg stirred through it. I’ve always called it my Nonna’s soup, as it reminds me of her every time I eat it. It’s a regular wintertime soup on my menu. I usually double the recipe (adding extra salt to taste) and eat it over a couple of days for lunch and dinner. It’s really one of my favourites! I love the clear fennel-scented cleansing broth with droplets of olive oil coating on top and the fragrant taste of...

While steaming then roasting potatoes may seem rather a fandango, one bite of these will convince you that it's utterly worth it; besides, it's not as if you have to do anything while they either steam or roast. Go slowly when adding the salt and vinegar, tasting as you go, as I like these to have the wincing hit of salt and vinegar crisps, and you may prefer a lighter hand with the sprinkling. For US cup measures, use the toggle at the top of the ingredients list.
Succulent vegan roast chicken "breasts" with seasonal roast veggies and a deliciously festive cranberry marinade.

Adapted from Food52, these pancakes are simple to throw together and make delicious use of an abundance of cabbage. I use 4 times the amount of cabbage called for in the original recipe (8 cups as opposed to 2), and I omit the shrimp, though I imagine the addition of shrimp would be very tasty. I like to serve these with a soy dipping sauce (as opposed to a mayonnaise-based one). The one below is one I've been using for years, but feel free to use your own.
