I manage a fruit farm and am also a breeder. In connection with grapes, I cross different species, sow the seeds of the resulting hybrids, and raise the plants. It takes about four or five years for the plants to bear fruit. I examine not only the flavor of the fruit but also items such as environmental resistance and yield. Even after finally bearing fruit, only a few of the species are marketable. Sometimes there are none. I have kept a record of the many species that are excluded in this process of selection, without every seeing the light of day in the market.
