While Maine lobster tends to get the most press, my family is pretty addicted to Peekytoe -- also known as bay, or rock -- crab, which is actually a by-product of the lobster fishing industry (they get caught in the traps). If there's one thing in life that my husband could eat every single night, it's Jambalaya. When we were dating he would always order it and I had no idea what it was nor did I want to. The idea of chicken, pork and shrimp mixed together didn't sound very appealing to me until I tried it for the first time. I can now honestly say that this Jambalaya recipe is one of my absolute favorite dishes! The one thing I do differently is I don't add the rice or pasta right in the pot. You can add it in there if you'd like, but I personally like to serve it over white rice! With tomorrow being Mardi Gras, what better time is there to make a delicious cajun dish and have a little celebration? Jambalaya Recipe: |Print Recipe| 1 pound boneless skinless chicken breasts (cut into 1" cubes) 1 pound andouille sausage (cajun sausage!) 1 (28oz) can diced tomatoes (with juice) 1 large onion (chopped) 1 cup (chopped) celery 1 large bell pepper (chopped) 1 cup chicken broth 2 cloves fresh garlic (minced) 2 tsp oregano 2 tsp parsley 1 tbsp + 2 tsp cajun seasoning (divided) 1 tsp cayenne (or less, if you don't like too much heat!) 1/2 tsp thyme 1 pound shrimp (peeled & deveined) Cooked pasta or white rice Heat 1 tbsp oil in dutch oven over medium heat. Season chicken with 1 tbsp cajun seasoning and set aside. Sautee sausage for 2-3 minutes. Remove from heat and add 1 tbsp oil to pan and sautee chicken. Remove and set aside. Sautee onion, pepper, celery and garlic for about 6-8 minutes. Stir in tomatoes and all seasonings (including 2 tsp cajun seasoning). Cook for one minute, then stir chicken and sausage back in. Cook for additional 10 minutes. Stir in chicken broth and simmer for 20-25 minutes. Add shrimp during the last 5 minutes of cooking. Serve over pasta or white rice (I personally prefer serving it over white rice!)
I love cookies. I love making them and I love eating them. When a batch is baking in the oven and I'm scooping cookies for the next, I always feel like I'm on a mission or something. I have to do it fast enough that when the cookies are finished baking the next batch is ready to go in. If not, I feel like everything in my life will go wrong. Does anyone else to this? Anyway, among all the cookies I've baked, this is the favorite of my friends. They're always asking me to bring Oatmeal Cookies. It's chewy and soft plus all the brown sugar just makes it so tasty. Annnd if you make it with half whole wheat flour it's kinda healthy. We're out of whole wheat flour and I used quick-cooking oats instead of rolled and the cookies are still wonderful. I made about 5 dozen cookies. Brown Sugar Oatmeal Cookies From Betty Crocker Makes 4 1/2 dozen cookies 1 3/4 cups packed brown sugar 1 cup butter or margarine, softened 1 teaspoon vanilla 2 eggs 1 cup all-purpose flour 1 cup whole wheat flour 1 teaspoon baking powder 3 cups old-fashioned oats Heat oven to 350°F. In large bowl, beat brown sugar and butter with electric mixer on medium speed, scraping bowl occasionally, until light and fluffy. Beat in vanilla and eggs until well blended. On low speed, beat in all-purpose flour, whole wheat flour and baking powder, scraping bowl occasionally, until well combined. Stir in oats. On ungreased cookie sheets, drop dough by heaping tablespoonfuls 2 inches apart. Flatten cookies to about 1/2-inch thickness. Bake 12 to 14 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks.

I brought this to a pot luck last night and it was the talk of the party because of its name! Everybody wanted to try it and everyone loved it! The cake was so moist and fresh tasting that a few people actually claimed it to be better than sex! One guy wouldn't even try it because he says that there's nothing better than sex! I loooove this cheesecake! I really wish I had some right now. This is one of the recipes I dug out during the holidays from back in the olden days when I was growing up. I already shared the stained glass candy we made on our family holiday weekend, but forgot to share this. I love it so much, I had it for breakfast three days in a row. Did I just say, (err, type) that out loud? Oh well. It’s true. I did. And I loved every sinful second of it. I just pulled the recipe out again for my sis. She’s making it for her sister-in-law’s birthday, but she’s putting a sweet, little twist on it. She’s making them in teeny, tiny mason jars. Too, too cute. Since I have the recipe out, I’ll let you in on the goodness. Aunt Helen’s Cheesecake What You Need: 1 prepared graham cracker crust 16 oz. container of sour cream 8 oz. cream cheese 2 eggs granulated sugar vanilla extract What You Do: Preheat oven to 375. Whip 1 cup sour cream + 8 oz cream cheese. In separate bowl, beat 2 eggs lightly and add ½ cup granulated sugar + ½ t vanilla. Stir mixture. Add cream cheese/sour cream mixture to eggs and sugar. Stir & blend. Pour into crust. Bake 25 min. @ 375. Cool. Beat 1 cup sour cream, 2 tbsp. granulated sugar, ½ t vanilla. Spread on cool cake. Refrigerate 24 hrs. Now dive into that goodness! I’ll make sure to share my sister’s tips for making them in the tiny mason jars. She made me some flourless chocolate cake in the tiny mason jars for my birthday too. I think we’ll have to have a guest post from Chef Jackie and her mason jar creations soon.
