"This simple stew sat simmering for a long time to bring out the sweetness of the carrots." —In-game description, Breath of the Wild Carrot Stew Ingredients: 1 lrg. Onion, chopped 3 Tbsp. Butter, Olive Oil, or Coconut Oil 1/2 tsp. Fine Sea Salt (or table salt) 1 Tbsp. Fresh Ginger, peeled & chopped 1 tsp. Garam Masala or 1/2–1 tsp. Curry Powder (depending on your taste) 1 1/2 lbs. Large Carrots, peeled & chopped 2 Cups+ Vegetable Broth 1/2–1 Cup Coconut Milk or Heavy Cream Lime Juice (optional) Garnish Chopped Fresh Chives, or green herb of your choice Top 1/2 of 2 Lrg. Carrots, peeled Fresh Cilantro or Flat-leaf Parsley Coconut Cream (from canned coconut milk) or Heavy Cream Directions: Sauté the chopped onion, butter, & salt in a large pan on medium-low heat until tender. Add in the ginger & curry or garam masala & toss to coat. Add in the carrot chunks & toss again. Cover & sauté for about 10 minutes. Pour in 2 Cups of the vegetable broth & bring to a boil. Cover, turn the heat down to a low simmer, & cook for about 30 minutes or until the carrots are tender. Using a slotted spoon, scoop out about 1/3 or more of the carrot chunks into a bowl (depending on how many chunks you want in your stew). Using an immersion blender, or transferring the stew to a standing blender in batches (with a towel over the top instead of the blender lid), blend until smooth (adding a tablespoon of olive oil if you'd like more emulsification). Add more broth if you'd like a thinner consistency. Pour back into the pan on low heat. Stir in the coconut milk or heavy cream, 1/2 cup or 1 cup, according to what you'd like, & then stir in any more seasonings to taste, including a couple of optional squirts or lime juice if you'd like. Lastly, stir in the reserved carrot chunks. To serve: Scoop the stew into a serving bowl, push away any chunks from the center & dot on some coconut cream or heavy cream in a circle, & then drag a toothpick through it to create little hearts/leaves. Sprinkle on some chopped chives or green herb of choice. If you'd like to add the 2 large carrot pieces sticking out as shown in-game, simply put 2 large carrot top halves (peeled) in a microwavable container & cover with water. Heat for about 4 minutes or until tender. Use a skewer to make a hole in the top of both pieces & then stick in a couple sprigs of fresh cilantro or flat leaf parsley (or dill, etc.). Note: The stew in-game looks a bit pinkish, even though it's made of carrots, so if you'd like to try for that color you could use less carrots and add in some diced tomato or tomato paste, and then use enough coconut milk or heavy cream to lighten the color. You could even add potatoes. I haven't tried this yet so don't have measurements, but next time I make this soup I'll be experimenting with it. :) If you can find white carrots (like in a specialty/health food store. Not parsnips) those would work great, & you could use tomatoes, or simply sweet/smoked paprika. To be accurate to the game though you'd still need orange carrot chunks in it.
