Каква щастлива случайност! Тъкмо наближава денят на влюбените и аз се влюбих. Изглежда, че няма да го прекарам сама ( не, че аз някога съм сама, ако ме разбирате :) Обектът на моите чувства може да не е човек, но пък, хей, любовта си е любов. След като някой може да обича парите толкова много, защо аз не да не се влюбя в сладкиш. Което е малко странно, защото аз съм винаги в търсене на поредната изкусителна вкусотия и не се обвързвам с рецепта за дълго време. (Явно не съм кулинарно-моногамна) Днешната обаче е наистина специална и ме накара да се чувствам и аз така. Освен, че ме накара да се оценя като майстор в кухнята, защото резултатът бе перфектен още от първия опит, което говори за успешността на рецептата, освен това ме дари и с удоволствието да хапна най-вкусните домашни кифлички, които някога съм опитвала. Още щом се разнесе ароматът им от фурната го познах - това е перфектно тесто за кифли, което помнех от детството си. В комбинация с плътния, хладен крем, магията на рецептата е толкова силна, че може да ви накара да затръшнете вратата и да прекарате следващите почивни дни в компанията на тестените изделия (и без това се очертава навън да е студено) Надявам се няма да взимате думите ми на доверие, а направо да вземете да проверите като ги направите още този уикенд. Ето и необходимите продукти: За тестото: Около 400 г брашно 250 мл прясно мляко щипка сол 5 с.л. захар 1/2 кубче мая (около 20 г) 3 жълтъка 3 с.л. масло За крема: 750 мл прясно мляко 2 бр. пудинга 1-2 ванилии 6 с.л. захар 180 г масло Още: яйце за намазване пудра захар за поръсване Започвам с тестото. Още веднага ще кажа, че макар и да спазих рецептата почти дословно, направих някои промени и ви съветвам и вие да правите рецептите на усет. Сладостта например на всяка захар е различна, затова преценете колко сладки искате да бъдат компонентите и намалете или увеличете количеството захар. Аз сложих малко повече захар в крема и използвах пълни супени лъжици за мярка при тестото. Тъй като нямам везна, отмервам брашното с чаени чаши от 200 мл. В купата на миксера (вече замесвам тесто само там) слагам за начало две чаени чаши пресято брашно, солта и три супени лъжици захар. След това прибавям шупналата мая (Предварително разтворена в леко затопленото мляко с останалата захар. Оставих да набъбне.) Пускам миксера (или вие ако замесвате на ръка, започвате да бъркате). Започвам да прибавям един по един жълтъците, а след това и малко по малко от разтопеното масло. Започнах да добавям, редувайки постепенно още малко брашно, масло, брашно, масло..на малки порции, докато се образува хубаво, еластично и меко, но нелепнещо тесто. (Вие можете да правите това, месейки на ръка.) Изваждам тестото от купата и оформям на топка. Поставям в леко намаслена купа и оставям да втаса за час. (При мен бе много по-малко като време, но пък в стаята има камина и е много топло.) След като тестото втаса, разделям тестото на две части. Всяка от тях разделям на осем равни части. От всяка част правим фитили с дебелина около сантиметър и дължина около 20 см. След това превиваме на две и завиваме около себе си ето така: Нареждам в тавичка с хартия за печене и оставям да се надигнат още веднъж. Преди печене ги намазваме с малко разбито яйце за блясък. Печем кифличките за около 15 минути на 200 градуса. Приготвяне на крема: Избрах крема да е смес от два пудинга - ванилия и сметана. Сложих млякото да се затопли на котлона със захарта. В отделна купа изсипах пудингите и добавих с лъжичка малко от топлещото се на котлона мляко, така че да мога да разбъркам съставките на еднородна смес. След като млякото тръгне да завира, прибавям пудинговата смес, при непрекъснато бъркане с телена бъркалка и на тънка струйка. За секунди кремът ще тръгне да се сгъстява. Дърпаме от котлона. Прибавяме ванилията и маслото. Бъркаме, докато маслото се интегрира напълно в крема. Оставям крема да се охлади, като можете да го покриете с опаковъчно фолио на повърхността, за да не се образува коричка. По-късното (при мен на следващия ден - какво да се прави, все готвя по нощите :))) режем кифличките по хоризонтал и шприцоваме от крема. Поръсваме кифличките с пудра захар и готово: Бих искала да уточня, че на мен ми стигна кремът за две трети от общия брой кифлички, но нали съм си алчна, не съм го пестила. И на другите кифлички обаче не им бе простено, тъй като се хапнаха с охота в комбинация на топло мляко, сладко и сирене :) Тези с крем обаче свършиха за отрицателно време и само мога да съжалявам, че някакси съм затрила кадрите, които направих на отхапаните вече сладкиши. В тях явно можеше да се види пърхавата текстура на тестото и лъскавината на плътния крем. Може би една от най-лакомо сниманите фотосесии, при които не се сдържах да мляскам, докато снимам :) И така, горещо препоръчвам тази рецепта, и се надявам и на вас да ви хареса, колкото и на мен! It should come as no surprise that I like to end my days with something sweet. And this sweet thing usually goes through phases. Last month it was microwave mug cakes--scant spoonfuls of flour, sugar, and spice whisked with an egg and zapped just long enough to produce a tiny hot, spongy little cake. The weeks before that, I was into homemade dark chocolate bark studded with bits of cracked espresso beans. (Delicious, but an unwise evening snack as it usually left me up all night thinking up projects.) Now, with sunny warm days upon us, it's berries. Strawberries, in particular, washed in cold water and served alongside a bowl of tangy crème fraîche and crunchy, toasty coconut palm sugar. It's the sort of treat that seems and tastes gloriously indulgent, and yet is not something that would be out of place on the breakfast table. I rediscovered my love for creme friache just a few weeks ago when I attended a reception hosted by the folks at Vermont Creamery. For dessert, they served rich flourless chocolate cakes topped with a cloud of the silky sour cream, and I was blown away by how perfectly it worked to balance out the sweetness of the rich cake. The flavor, if you've never tried it, is a bit of a cross between mascarpone and sour cream. It's got the cultured tang you might know from yogurt or buttermilk, but there is also a very lovely sweetness like that you get from good heavy cream. And the texture is thick and a bit gooey, like marshmallow fluff. When my gifted container finished, I bought another and then a third, and then this weekend I was dismayed to find that the container was nearly empty yet again. I wanted to serve it along with dessert at the Mother's Day lunch I was preparing for my mom and mother-in-law, but I didn't have time to buy more. That's when I remembered a long ago article that mentioned how incredibly easy it is to make creme fraiche at home. I got online and found that it really was easy. As easy as whisking together good heavy cream and a few tablespoons of buttermilk or yogurt or even just some storebought creme fraiche. I happened to have a small unopened bottle of Ronnybrook cream (the best around here), so I poured it into a bowl and stirred in equal parts Greek yogurt and what was left of my Vermont Creamery container. I covered the bowl with a piece of the plastic (poking in a few holes to allow air to travel), and left it on top of the stove overnight. By Sunday morning, the bowl of cream had turned thick and silky. I was so excited that I brought it into the bedroom where Eugene was still sleeping. "Look at this! I made creme fraiche!" I exclaimed. "That's nice," he mumbled, then rolled over back to sleep. I left the room hugging my bowl then placed it in the fridge to chill and thicken a bit more. I served my homemade creme fraiche to the moms along with fresh strawberries, blackberries, and coconut palm sugar. They loved it. Homemade Creme Fraiche Recipe Ingredients 2 cups good quality heavy cream (not ultra-pasteurized) 1/3 cup buttermilk, yogurt, or creme fraiche (or a combination of these adding up to 1/3 cup) Directions Whisk the heavy cream and buttermilk together in a glass bowl. Cover with plastic wrap that's been poked several times to allow air to pass. (You can also use cheesecloth.) Leave at warm room temperature for 12 to 24 hours, or until the cream has thickened into the texture of loose whipped cream. Give it another stir, cover tightly with a new piece of plastic wrap, and place in refrigerator for at least 8 hours. It will thicken and set completely. You can now serve this with both sweet and savory dishes, or use for cooking. (Just as you would use sour cream or store-bought creme fraiche). You can also sweeten or flavor the creme fraiche after it's ready--some good additions are lemon or orange zest, vanilla beans, dried herbs, or sugar. Keeps well 1 week to 10 days when stored in a tightly sealed container in the refrigerator.

I recreated the krémes of my childhood. With several years of on and off krémes experiments behind me, I am happy to announce my first batch of successful krémes! Krémes is a classic Hungarian treat. Krémes is made from real vanilla custard; predominantly eggs and milk. It is sandwiched between layers of flaky pastry and then dusted off with a layer of confectionary sugar… krémes is pure delight on all fronts. I remember two types of krémes; homemade and the coffeehouse version. Homemade krémes was delicious, fairly flat with runny yellow cream between 2 layers of flaky pastry. Coffeehouse krémes was not quite as yellow; but was tall and light and most likely had some gelatine in its custard layer. I especially loved Hauer’s krémes! Hauer was the original name of the coffeehouse, but it went by a different name during the communist era. Was it Erkel? I don’t remember. Besides my family kept referring to it as Hauer, the name change when the coffeehouse was privatized was just one of the many things communism was resented for. Go back yet another twenty four years, exactly four years before I was born. The war just ended. Budapest was bombed to hell and the people were hungry, very hungry. In desperation for some cash my great aunt, Olgi néni saved her food stamps and managed to bake a tiny pan of krémes. She packed it up and took it down to the corner of Rákóczi út and Szövetség utca to sell. Along came a bedraggled Hungarian soldier, just back from the front, and grabbed the pan out of her hands. He sat down on the pavement and polished down the entire pan. He then wiped his face on his sleeves and gave the empty pan back to my weeping aunt. Of course he didn’t pay for it, how could he? When I heard this story, I didn’t know who to feel sorrier for, my aunt or that soldier. So you see krémes imbedded itself into my family history in a variety of ways. HUNGARIAN CUSTARD SLICEVanilla Infused Milk 2 cups milk 1 vanilla pod Flaky Pastry 1-1/2 cup + 1 Tbsp flour 3/4 cup chilled hard margarine 1 pinch of salt 4 Tbsp cold water 4 tsp vinegar Custard Layer 8 egg yolks 1/2 cup sugar 1/3 cup + 1Tbsp flour 2 pkg. or 2 Tbsp real vanilla sugar 3 pkg. gelatine [21 g] 1/4 cup unsalted butter 8 egg whites 1/2 cup sugar 1 tsp fresh lemon juice candy thermometer is essential Topping 1/4 cup icing sugar • Make the vanilla infused milk first. • Heat the milk in a saucepan. • Scrape the seeds from the vanilla bean into the milk with a paring knife, and add the bean pod to the milk. • Cover, remove from heat, and infuse for one hour. • Next make the flaky pastry. • In a large bowl crumble the flour and the chilled margarine to fine crumbs. • Mix in the salt. • Place the cold water and the vinegar in a small dish. • Pour the liquid over the pastry crumbs. • Stir to combine and gradually form a rough ball. • Generously flour a board and roll out the pastry into a thin rectangle. • Roll up the pastry and divide into 4 parts. • Roll each division into a thin rectangle. • Stack the four rectangles on top of one another. • Chill for twenty minutes. • Divide the chilled pastry into two equal halves. • Roll out the first pastry very thin. • Fold it in half and place the folded edge in the middle of the 9X13 baking pan. • Unfold and arrange the pastry with deep folds as in the photo. • Let the dough go up the sides halfway, pastry will shrink during baking. • Place in a preheated 400F oven for 14-18 minutes. • Keep a watch, pastry burns easily. • When the pastry is golden brown, remove pan from the oven. • Immediately cut pastry into twelve squares. • Divide the long side by 4 and the short side by 3. • Wait a few minutes and very carefully remove the squares and set them aside in the same order as they were in the pan. These will go on the top later. • Roll out the remaining dough and arrange it in the baking pan as before. • Bake the second pastry sheet and set it aside. This will be the bottom of the krémes. • Next make the custard layer. • In a medium sized bowl beat the egg yolks and 1/2 cup sugar for 8 minutes • In a separate bowl whisk together the flour, gelatine and the vanilla sugar. • Gradually add the flour mixture to the beaten egg yolks and beat until smooth. • Remove the vanilla pods from the vanilla infused milk. • Gradually add the vanilla infused milk to the bowl with the eggs and the flour. • Transfer custard to a medium sized pot. • Attach the candy thermometer to the side of the pot so you can keep an eye on the temperature. • Over medium heat and continually stirring heat the custard. • Do not let custard heat beyond 80C [176F] for this recipe. • When the custard reached 80C remove from heat. • Stir in the butter and set aside. • While the custard is cooling whip the egg whites. • With clean beaters beat the egg whites until soft peaks form. • Add the lemon juice and beat until almost stiff. • Add 1/2 cup sugar and beat until very stiff and shiny. • Very slowly and gradually, gently fold the custard into the stiff egg whites. • Pour on top of the bottom pastry layer and place in the fridge. • Make sure the pan is level on the shelf. • When the gelatine is beginning to set, place the pastry squares on the top. • Let the krémes chill thoroughly. • Before serving generously sift icing sugar on the top. • Cut the slices between the pastry squares.
