Instructions: • 1. Preheat oven to 450 • 2. Let Filet Mignons sit out for at least 30 min, pat dry with a paper towel - salt and pepper generously • 3. Use cast iron pan and get very hot with 1-2 TBSP high heat oil or olive oil • 4. Put filets in pan, 2 1/2 minutes on each side NO MORE NO LESS - Do not move filets let them sit • 5. Put 2 TBL butter in pan and optionally fresh herbs, spoon it all over filets - do this for 1 minute • 6. Put pan with steaks in the oven until the internal temp reaches almost desired doneness (continues to cook after being removed) • 7. Remove from oven and let it sit for 10 minutes on a plate with foil over top.
