15min · 2 servings Recipe (serves 2) • 4 cups baby spinach • 1/2 cup thinly sliced strawberries • 1/2 cup chickpeas (drained and rinsed) • 1/4 cup raw walnuts • 1/4 cup parmesan shavings • 1 avocado thinly sliced Salad Dressing: • 2 Tbsp olive oil • 2 Tbsp balsamic vinegar • 1 teaspoon Dijon mustard • 1 teaspoon maple syrup • juice of 1/2 lemon • 1 Tbsp apple cider vinegar • Salt and pepper to taste Directions: On a small frying pan, add raw walnuts and toast on low heat for 5 minutes (or until golden). Set aside and allow to cool. Assemble the dressing by adding all the dressing ingredients together. In a salad bowl, add baby spinach, strawberries, chickpeas, toasted walnuts, avocado, & parmesan shavings. Pour the dressing over. Season with salt and pepper. En
