RECIPE (vegan, gluten free):
• 2 cups finely diced radishes
• 1.5 cups finely diced cucumber
• 1/2 cup finely chopped parsley
• juice from 1/2-1 lemon
• 2 tbsp olive oil
• salt + pepper to taste
add all ingredients to a large bowl and toss to combine!
