Made of lettuce, tomatoes, red onion, olives, croutons and a flavour-packed dressing, Italian salad is one of the easiest and best out there. What I love about it (apart from the fact it would be a star on any table) is that there are so many elements you can prep ahead, which we all know is a lifesaver whether you’re making it for Christmas lunch or as a side for dinner. You can make the croutons a day ahead - just cool completely before storing in an airtight container. The dressing can also be made a day ahead and kept in the fridge, though do remember to take it out to return to room temperature before serving. This just leaves you to cut the vegies and assemble when you’re ready to eat - how easy is that!
