Scroll down for the English version Op mijn laatste twee web-log artikelen betreffende pruimenwijn en vlierbessenwijn kwamen veel bezoekers af. Een aantal lezers hebben mij daarop persoonlijk gemaild. Ze waren zelf aan de slag gegaan met deze of andere recepten maar kregen hun most niet goed aan het gisten. Als de most niet goed wil gisten dan kan dat tot bederf of ziekten leiden en dat willen we natuurlijk voorkomen. We moeten dus zorgen voor een zo optimaal mogelijke leefomgeving voor je gist. De zuurgraad moet goed zijn, er moet gistvoeding en suiker aanwezig zijn en de temperatuur moet niet te hoog maar ook niet te laag zijn. Als we er van uitgaan dat je als wijnmaker de uiteindelijke habitat van de gist (je pulp of most) zo optimaal mogelijk hebt ingericht dan moet het toevoegen van gist na een korte tijd leiden tot tekenen van gisting. Een aantal factoren kan het starten van de gisting echter belemmeren. Een van die factoren is de gist zelf. De gist die wij kopen is onder optimale omstandigheden koel bewaard. Zowel in de winkel als bij onszelf thuis kan gist het beste in een koelkast bewaard worden. Maar vaak is dat niet het geval. Bij een aantal brouw-winkels waar ik zelf geweest ben lag de gist gewoon op planken of in een vitrine. En in de zomermaanden kan de temperatuur erg oplopen hetgeen niet echt bevoorderlijk is voor de bewaartijd van de gist. De gist kan er erg door degenereren. Het openen van een zakje gist om er wat gist uit te halen zorgt er ook voor dat er wat lucht in het zakje terecht komt. Deze lucht bevat wat vocht en een aantal gistcellen zullen daardoor geactiveerd worden. Er is echter in het zakje geen voeding aanwezig en die gistcellen zullen dus sterven. De gist die dus in het zakje achterblijft kan dus minder van kwaliteit zijn. Daarom wordt vaak ook aangeraden om altijd het hele zakje te gebruiken. Dan is er natuurlijk het moment dat de gist in de most terechtkomt. Meestal gebruiken wij gedroogde gist. Als deze gist in een vochtige omgeving terechtkomt (onze most of pulp) dan zal hij meteen zoveel mogelijk vocht willen absorberen. De gist werkt als een spons. Hij neemt dan ook stoffen op die in het vocht zitten die hij normaal niet zou opnemen. Deze stoffen kunnen de gist belemmeren in het verdere de-hydrateer proces, maar ook in zijn leven en voortplantingsmogelijkheden. Hierdoor kan het gebeuren dat een gisting moeilijk op gang komt of soms zelf helemaal niet. Als we droge gist bijvoorbeeld direct op de most uitstrooien dan zal die gist meteen het vocht gaan absorberen en actief gaan worden. Maar de most bevat sulfiet. Nu is cultuurgist sulfiet-resistent maar dat is gist in actieve vorm. Droge gist die most met sulfiet absorbeert kan wel eens inactief worden. Om ondanks al deze negatieve factoren onze gist zo optimaal mogelijk aan de slag te laten gaan, gaan we zorgen dat hij voordat hij aan de most wordt toegevoegd in een optimale leefomgeving eerst kan 'bijkomen' van het re-hydrateren. We gaan dus een ideale most maken voor onze gist. We noemen dat een giststarter. Wijn maken is een mix van kunst en wetenschap. De kunst bestaat eruit om met het sap dat we hebben een zo goed mogelijke wijn te krijgen. De wetenschap bestaat er uit dat we de juiste zuurgraad, suikergehalte e.d. moeten verzorgen, maar ook dat we zorgvuldig plannen. Een gist-starter maken we dan ook 2 tot 3 dagen voor dat we het fruit gaan verwerken, zodat we zeker weten dat we een optimaal werkende gist aan onze most gaan toevoegen. In de supermarkt kopen we een pak puur appelsap of druivensap. Let er op dat als je een witte most hebt je ook wit druivensap gebruikt om een verkleuring te voorkomen. Appelsap is het meest neutrale, maar druivensap kan een beetje extra body aan je uiteindelijke wijn geven. Wees er erg alert op dat er geen conserveermiddelen in het sap zitten. Meet 1 liter sap af en doe dat in een pan op een laag vuurtje. Ondertussen meet je 120 tot 150 gram suiker af en 2 gram citroenzuur. Breng dit al roerend aan de kook. Als het sap kookt dan laat je het afkoelen. Afkoelen doe ik meestal door de pan in een bak met water te zetten en te roeren. Als de temperatuur tot zo een 40 graden gezakt is voeg je 2 gram gistvoeding toe. Al roerend laat je het geheel verder afkoelen tot zo een 20 tot 25 graden. Ondertussen kun je een plastic fles schoonmaken en daarna ontsmetten met water waarin je wat sulfiet en citroenzuur doet. Zorg dat de hele fles ontsmet wordt door ze helemaal te vullen. Als je starter-most dan afgekoeld is tot zo een 20-25 graden dan leeg je de fles en spoelt hem met koud water uit om eventuele sulfiet resten te verwijderen. Dan zet je er een trechter op. Giet dan een paar theelepeltjes gist (of het hele zakje) in de trechter en giet de inhoud van het pannetje ook in de trechter. De temperatuur mag niet te hoog zijn want gist sterft meestal bij temperaturen rond de 32 graden. Door het plonsen van de gist en de starter-most door de trechter zal er zuurstof in je most zijn gekomen en dat willen we ook. Daarna draai je de dop op de fles en goed schudden. Hierdoor zal er nog extra zuurstof in de most komen. Dan draaien we de dop los en vervangen deze door een prop watten of een keukenpapier dat we met een elastiekje vastzetten. Zo kunnen er geen fruitvliegjes of andere insecten in de starter terechtkomen, kan het co2 gas eruit ontsnappen en kan er zuurstof in komen. Na een tijdje zal de gist flink gaan werken. Dat kun je zien doordat er een schuimkraag(je) op je starter ligt en doordat er koolzuurbelletjes opstijgen in de most. Gebeurt er, na een paar uren of een nacht, niets dan is je gist dood of zijn er te weinig levende gistcellen in de starter aanwezig om het proces op gang te brengen. Je hebt nu de tijd om een ander zakje gist toe te voegen. Ondertussen ga je je eigenlijke most prepareren met sulfiet en pecto-enzymen. In de ideale situatie heb je de giststarter aangemaakt in een 3 of 5 liter fles. Giet nu een halve liter van je most bij de goed werkende giststarter. Wacht totdat de boel weer flink aan het gisten is, en voeg dan 1 liter most bij de giststarter. Weer wacht je tot de boel goed aan het gisten is. De gist heeft dan optimaal kunnen wennen aan zijn nieuwe leefomgeving. Je hebt dan 2 en een halve liter flink werkende giststarter en die kun je nu aan de rest van je most toevoegen. Heb je de gisstarter in een kleine fles aangemaakt dan giet je hem gewoon bij je most. Het zal dan even duren voordat de gist aan zijn nieuwe leefomgeving gewend is maar uiterlijk na 12 uren moet je toch wel activiteit waarnemen. Slotwoord: Met behulp van een giststarter weet je in ieder geval dat je een goed werkende gist aan je most toevoegd. Als er dan alsnog problemen met de gisting ontstaan dan weet je in ieder geval dat dat niet aan de gist heeft gelegen en moet je de oorzaak in een andere hoek zoeken. My last two log-entries about plums and elderberries drew a lot of visitors. The articles led to some discussions on winemaking forums but also made some readers write me about fermentation starting problems. Now if fermentation does not start in a relatively short time it can lead to spoilage of your must, something we absolutely want to prevent happening. So we have to make sure that the habitat for your yeast will be at an optimum. The acidity should be right, there should be nutrient and sugar and of course the temperature should be right. Now if we winemakers made shure that the habitat for your yeast (juice or pulp) is at an optimum condition the addition of yeast will lead to signs of fermentation in a short time. A number of factors kan however block the fermenation. One of these factors is the yeast itself. The yeast we buy at our local home brew shop is normally kept in optimum circumstances meaning dry and cool. As well in the shops as at home yeast should be kept air-tight in the fridge. Often this is not the case. I have visisted home brew shops myself where the yeast was kept on shelves and not in a fridge. And in the hot summer months temperatures can rise to an unacceptable level for keeping your yeast healthy. The shelf life will therefore ceratinly be lower as expected. Opening a sachet for getting some of the yeast out will also introduce air into the sachet and therefore humidity. Dried yeast cells will be awakened by the moisture. There is however no nutrient present and those cells will die. Therefore the remaining yeast in the sachet can be of lower quality. This is the reason it is often recommended to use the complete sachet. And then there is of course the moment the yeast will be innoculated. If the dried yeast enters a wet environment (our must or pulp) it will immediately absorb as much as moisture as possible. The yeast will act as a sponge. It will therefore also absorb elements in the moisture it would normally not absorb. These elements may inhibit the yeast. This is the reason a fermentation might start very slow or not at all. If we for example sprinkle the dry yeast directly on our must it will immediately absorb the must and try to become active. But the must will contain sulphite. Now normally wine-yeast is sulphite-resistant but then we are talking about yeast in active form. Dried yeast that aborbs sulphite might become inactive or even die. This is the reason manufacturers tell you to de-hydrate yeast in some plain water. So to give our yeast the best headstart for a healthy fermentation we make sure that before adding it to the must we will give it an optimum habitat to recuperate from de-hydrating. So we will make an ideal must for our yeast. We call it a yeast starter. Now winemaking is a mixture of art and science. The art manifests in making a fantastic wine from our initial juice. The science manifests in calculations about acidity, SG etc. But also in carefull planning. A yeast starter will be made one to two days in advance of the processing of the fuits for our wine. We will then be sure that we add a vigorous fermenting starter to our must. In the supermarket we buy pure apple juice or grape juice. If you are starting a white wine make sure you buy a white grape juice to prevent coloring of the must. Apple juice is the most neutral juice but grape juice will add some body to your wine. Be very alert that the are no conserving products are used. Measure 1 liter juice and put it on a low fire. Meanwhile measure 120 to 150 grams of sugar and 2 grams citric acid or tartaric acid. While stiring the ingredients in bring the juice to a boil. When boiling let it cool down again. I normally do this by putting the pan in the sink with cold water and stir. When the temperature is down again to about 40 degrees celsius add 2 grams yeast nutrient. While stirring let it cool down further to 20 to 25 degrees celsius. All ingredients should be well dissolved by now. Meanwhile clean a plastic bottle and sanitise it with water with some citric acid dissolved and sulphite. Clean the entire bottle by totally filling it. Now when the starter must has cooled down to 20-25 degrees celsius empty the bottle with the sulphite solution and rinse it a few times. Put a funnel on and sprinkle a few tea spoons yeast (or the complete sachet) in and then add the starter must. Make sure the temperature is not to high as yeast will die at temperatures in access of 32 degrees celsius. By splashing the yeast and the starter-must through the funnel oxygen will be introduced which will help the yeast at reproduction. Put the stopper on the bottle and shake well. This will introduce even more oxygen. Then loosen the stopper and replace it with some cotton or a piece of kitchen paper tightened with a rubber band. This way no fruit-flies or other insects can get into the starter, CO2 kan escape and oxygen can enter. After a while fermentation will start. You can observe this by the layer of foam that will occur and the small bubbles of CO2 that will rise in the starter. If within a few hours or a night nothing will happen you know that the yeast was dead or there were to few good yeast cells left to start the process. You will have still time to add another sachet of yeast. Meanwhile prepare the must for the wine-to-be with bringing the SG up to level, correcting the acidity, adding pecto-enzymes and sulphite. In the most ideal situation you will have your yeast starter prepared in a 3 to 5 liter bottle. So now add half a liter of the wine-must to the starter. Wait until fermentation is vigorous again and then add another liter. Again wait until fermentation is vigorous again. The yeast is now totally accustomed to the must it is going to live in. You will have a 2 and a half liter vigorous fermenting yeast starter which you can now safely add to the wine-must. If you have made the starter in a smaller bottle then pour it like that in the must. It will take a while until the yeast is used to its new environment but after a few hours you should notice some activity. Afterword: By using a yeast starter you are sure that you are adding a strong, healthy fermenting yeast to your must. Therefore the must itself will start fermenting easily. If there should occur any problems with fermentation you can be sure it is not the yeast that is causing the problems.
