I'm super happy today. Just produced the best batch of homemade soba noodles with my Joyoung Noodlemaker. It came out smoothly, without having the ridges appearing on the surface of the strands. Dry to the touch, held together well enough to not break as they appeared!!! I managed to get 460g worth of soba with a combination of 400g buckwheat flour + plain flour. Cooked 150g for my two boys, and have four more servings for later on. Had it with tomatoes-garlic-onions-basil sauce. I know, it's a weird combination but the boys like it. So, i'll just call today's meal Sobaghetti, ok. I know, you all now want to know the ratio used in this batch of homemade low-gluten noodle recipe right.... here you go : Homemade Soba Recipe v2 250g unbleached plain flour 150g organic buckwheat flour 140ml water 1tsp oil 1tsp sea salt Enjoy :)
