Ingredients: 1 egg 3/4 cup Greek yogurt* (180 ml) 1 tablespoon maple syrup or brown sugar 1/2 teaspoon vanilla extract 1/2 cup gluten-free flour mix (or regular flour if not 1 1/2 teaspoons baking powder coeliac/intolerant/IBS sufferer) (120 ml) + sliced strawberries 1. Mix the wet ingredients together 2. Add the dry ingredients and stir until combined 3. Dip the strawberry slices in the batter until completely covered in the batter 4. Cook on a non stick skillet for a couple of minutes on each side 5. Serve with maple syrup, for example
