garlic shrimp & sun-dried tomato stuffed shells with tomato basil sauce | so DELICIOUS✨ Recipe for 11-12 shells: • preheat oven to 375 • boil jumbo pasta shells almost al dente • sauté 15-20 shrimp with 1tbsp butter & 1tbsp garlic • dice shrimp into small pieces • in a bowl mix 8oz of ricotta, shrimp, 1/2 cup chopped spinach, 1 egg, 1 cup shredded mozzarella, 1/2 cup diced sun-dried tomatoes, 1tsp parsley & crushed red pepper • pour in 1/2 of tomato basil pasta sauce in baking dish • stuff shells fully with shrimp mixture & place in baking dish • pour remaining sauce over shells • top with 1/2 grated mozzarella & parsley • bake at 375 for 10-15 min • *I like to grate some more mozzarella towards the end of baking to have a fresh melt of cheese on top (optional)
