Grilling season is winding down (except for those living in the valley of the sun, it's just getting started!) Jason's sister made this for us once when we were visiting and it has been a summer favorite ever since. 1/3 c BBQ sauce 1 can pineapple chunks (NOT drained) 2-3 chicken breasts green pepper, sliced red bell pepper, sliced onion mushrooms cherry tomatoes wooden skewers The joy of kabobs is that you can add whatever you want and you can't really go wrong. These are a few of the suggestions, but use whatever ingredients you like. Cut chicken in large chunks then saute in 1Tbs vegetable oil until lightly browned (don't over cook). Cut other ingredients into large chunks. Mix bbq sauce and pineapple juice then marinate meat and veggies for several hours or overnight (save the sauce). Build your kabobs by layering the ingredients on the skewer. Grill over medium heat for 10-15 minutes, brushing with reserved sauce a couple times during grilling. You can also brush on butter once or twice while grilling to prevent from drying out. You can serve on the skewer or remove and serve over rice. So yummy served with grilled corn on the cob and fresh fruit.

Girls Grill Too!!! It was a beautiful day in Philly so I broke out my little Weber Smoky Joe. I've always been fond of kabobs for adding fun to a grill out, the best part is coming up with different flavor combos. These Kielbasa and Potato Kabobs with Mustard Marinade are very tasty and since the meat and potatoes are already cooked, they're grilled just until the peppers and onions begin to char and soften. The whole small potatoes are a pretty touch, about 1" would be perfect (these are bigger). While this might sound a little odd, I think partially cooked Brussels sprouts would be a good addition to the skewer too. Gotta tell ya folks, kielbasa on the grill is amazing! Had to add a pic that showed some smoke:@) Kielbasa and Potato Kabobs with Mustard Marinade Kielbasa, sliced about 1/2" thick-on the diagonal just for looks... small potatoes (approx 1"), cooked until just barely done, not over done or mushy sweet onion and green bell pepper, cut up skewers Alternate food onto skewers (if wooden soak in water for 30 minutes) Mustard Marinade-adapted from The Freckled Foodie 3 Tblsp oil-I used olive oil but would try vegetable next time 3 Tblsp vinegar-I used cider 3 Tblsp mustard-I used Dijon but think any kind would be fine 2 Tblsp honey-my addition-I felt this marinade needed something sweet 1 Tblsp soy sauce 1 Tblsp hot sauce, optional-I used Crystals Louisiana Hot Sauce 1 clove garlic, minced-big or small, you know your crowd:@) Whisk everything together and pour over skewered kabobs. Let marinate while the grill heats up. Grill until onions and peppers are cooked to your liking. Notes: First and foremost... I'm on a mission to find stainless steel skewers! Don't like the way wooden ones splinter while adding food and burn during cooking, they are still good for removing air bubbles during canning though. This amount of marinade is good for about 8 kabobs. I laid the kabobs in a 9x13 pan and poured it over them, then turned them while the grill heated up. Since my kielbasa was fully cooked I had no issue with basting the kabobs with the marinade as they cooked. I used two skewers so I could turn the kabobs without the food spinning, this worked very well. Could I have made this in my grill pan? Absolutely! And it would have been a nice quick week night dinner on a gas grill. I try to think ahead before firing up the grill, what else can I cook for later in the week? Could be something as simple a hotdog for a pork and beans lunch on Monday. Other kabob combos: Chicken, zukes, peppers, onions and Italian dressing. Teriyaki Beef with peppers and onions. I moved a few weeks ago, and my new oven seems to hate me. Every time I use it I am worried I will burn the house down. Seriously. I made rolls last night and cooked them for much less time than required, and guess what happened? Burned!! My sweet husband humored me and ate them, but they weren't great. I'm thinking its getting back at me for telling it I wished it was gas instead of electric. I will eventually figure this thing out, but for the time being, I am using my crock pot and my awesome little grill as much as possible. In enter these kebabs. I have made them twice in the last 10 days. They are delicious and flavorful and don't require the use of that darn oven (did I mention there is no window on it? why would an oven ever even be designed without a window? I am seriously at a loss.) You can put any veggies on these kebabs, as long as they will hold up on a skewer. Just make sure you soak your sticks for a few hours before putting them on the grill... otherwise you may get a burned kebab! Island Chicken Kebabs 1/3 cup oil 3 tablespoons freshly squeezed lemon juice 2 tablespoons soy sauce 1 clove garlic, finely minced ½ teaspoon dried oregano ¼ teaspoon salt ¼ teaspoon freshly ground black pepper 3-4 chicken breasts, cut into 1-2 inch cubes Fresh Veggies we like: pineapple purple onion red pepper/orange pepper zucchini Mix first 7 ingredients in a bowl or large ziplock bag. Add chicken and refrigerate for at least 3 hours, and up to 10 hours. Soak bamboo skewers for a few hours while the chicken is marinating. At this point I like to slice up all my veggies and set them aside in the fridge. When we are ready to eat, I pull everything out and layer them on the skewers. Grill for about 4-5 minutes per side, making sure chicken is cooked through and veggies are slightly crisp, but not raw. slightly adapted from Mels kitchen cafe

Shish Kabobs are always fun and seem kinda fancy but this Ham and Peach Shish Kabob with Peach Bourbon Glaze comes together in no time and only cooks for about 6-8 minutes. I used a ham steak and didn't bother to peel the peaches-this is super easy folks! The kabobs are pretty straight forward so my notes are about the glaze: If you don't want to add the Bourbon, don't. Simply put your jam in the microwave for a few seconds to melt it a bit so it can be brushed on the kabobs. I wish I had followed my instinct and added some spices to the glaze... I really like nutmeg with peaches, but cinnamon would be good too. If your jam/preserves are chunky you might want to give them a whirl in the food chopper. I've been looking for metal skewers and found some nice ones at Walmart. They are stainless steel, $1.97 a pack and are folded into a V shape to help keep food from spinning when you turn them. I've used them a couple times now and so far I really like them! Ham and Peach Kabobs with Peach Bourbon Glaze-Glaze from Epicurious Ham, Onion and Bell Pepper cut into bite size pieces, about 1" Peaches, cut into bite size pieces-I cut them into 4ths and then cross wise-8 pieces per peach Glaze: 1/2 C peach jam/preserves 2 tsp Bourbon I'd add a few hearty grates of fresh nutmeg or a shake of cinnamon -Mix well Thread ham, onion, peppers and peaches onto skewers. Make sure you soak wooden skewers for at least 30 minutes in water. I gave them a quick spritz of vegetable oil before placing on the grill. Grill kabobs over medium hot heat for about 6-8 minutes. Watch them and turn to a different side as they begin to char. Brush with the glaze during the last couple minutes.
