Replicating Nabisco’s discontinued Famous Chocolate Wafers was a tall order. But our homemade version makes an excellent stand-in. Bakers across the country mourned when Nabisco Famous Chocolate Wafers were abruptly taken off the market in 2023. But we managed to engineer a homemade facsimile that makes an excellent stand-in for Famous Wafers in cookie crumb crusts and icebox cakes. Choosing the right cocoa powder was critical to achieving the deep brown hue of the original and its distinctive chocolate flavor (shared by Nabisco’s Oreo cookies). For flat cookies with a spread that helped achieve the desired crispness, we omitted egg and baking powder in favor of baking soda. Swapping granulated sugar for confectioner’s sugar also aided in a more delicate crispness versus a harder crunchiness.

Arepas are a popular South American food with over 75 distinct forms. If you've never had crispy cheese arepas, trust me, it's time.
A little bit croissant and a little bit sticky bun, Brittany's traditional kouign amann is easier and quicker to make than either one. Though American bakeries are increasingly selling small-format kouign amann (or “kouignettes”), the large multiserving disk made in Brittany provides greater textural contrast: a crunchy top, a lightly caramelized base, and custardy inner layers that are soaked with butter and melted sugar. A lean yeasted dough made with all-purpose flour offered the best combination of strength and workability. Embedding the sugar (along with a little extra salt, for pronounced salinity) into the butter block by paddling the ingredients together in a stand mixer limited contact between the sugar and dough, thus preventing the sugar from drawing moisture out of the dough and making it unworkably sticky; it also limited abrasion during rolling, which would otherwise tear the dough. It helped to enclose and shape the butter mixture in a parchment paper “envelope.” The parchment kept the mixture contained so that we ended up with a thin, even rectangle that perfectly fit the dimensions of the dough and was easy to roll during lamination. Piercing the shaped kouign amann before baking provided escape routes for any trapped air that would otherwise cause the pastry to balloon in the oven, distorting the beautiful layers.
