Kao što joj ime kaže, kremasta je i filovi od bele i crne čokolade su ono što je čini tako posebnom. Juče je bio moj rođendan i častim vas ovom divnom tortom! 🎂🌠🎀 Krem torta Sastojci: Za koru: 6 belanaca prstohvat soli 100 gr šećera 60 gr pečenih mlevenih lešnika 50 gr oštrog brašna 2 kašike kakaoa 2 kašičice praška za pecivo 40 ml ulja Za natapanje kora: 100 ml čokoladnog mleka ili nes kafe Za kremu: 8 dl mleka 70 gr šećera 120 gr gustina 6 žumanaca 200 gr maslaca 50 gr bele čokolade 100 gr belog dela eurokrema 50 gr noisette čokolade 100 gr tamnog dela eurokrema 250 ml slatke pavlake Priprema: • Priprema kore: Razdvojiti belanca i žumanca. Belanca sa prstohvatom soli umutiti u čvrst sneg uz postepeno dodavanje šećera. Zatim odložiti mikser i u sneg ručno umešati suve sastojke: pečene mlevene lešnike i brašno koje je prethodno zajedno prosejano i pomešano sa praškom za pecivo i kakaom. Na kraju u smesu polako uliti ulje, promešati špatulom pažljivo prevrćući smesu kako ne bi pala. Okrugli kalup dimenzija 26 ili 28 cm obložiti pek papirom ili ga podmazati i posuti brašnom. Smesu za koru izliti u kalup i peći koru u prethodno zagrejanoj rerni na 170 stepeni maksimalno 15 minuta (proverite da li je pečena ubadanjem čačkalice). Koru ostaviti da se potpuno ohladi i tek onda je dugačkim, oštrim nožem horizontalno preseći na dva dela. • Priprema kreme: Žumanca pomešati sa gustinom i 1 dl mleka, tako da nema grudvica, a preostalih 7 dl sipati u šerpu, dodati mu šećer i staviti na srednje jaku vatru da prokuva. Kada mleko počne da vri, skinuti sa vatre i uz stalno mešanje uliti u mleko žumanca razmućena sa gustinom i mlekom, vratiti na vatru i mešati dok se krem ne zgusne. Ja tu često koristim mikser, kako bih bila sigurna da se neće stvoriti grudvice pa najmanjom brzinom mutim krem dok se ne zgusne. Skinuti sa vatre i uz povremeno miksiranje sačekati da se ohladi. Za to vreme u dve jednake staklene činije rasporediti delove kreme: u jednu staviti 50 gr bele čokolade i 100 gr belog dela eurokrema, a u drugu staviti 50 gr noisette (ili crne) čokolade i 100 gr tamnog dela eurokrema. Zatim jednu pa drugu činiju staviti na šerpu u kojoj tiho vri voda kako bi se čokolada i krem istopili i sjedinili. U mlaku kremu dodati maslac iseckan na listiće i dobro izmiksirati da se poveže. Potom rasporediti kremu na dva jednaka dela, odnosno, dodavati kašiku po kašiku u one dve činije sa rastopljenim kremovima i čokoladom, tako da dobijemo dve količinski jednake kreme, belu i crnu. Slatku pavlaku čvrsto ulupati (obavezno pazite da se ne premuti!). U svaki krem dodati po tri kašike slatke pavlake i dobro promešati. A u ostatak ulupane pavlake zatim dodati po dve, tri kašike od svake kreme i dobili ste kremu za ukrašavanje torte. Nju ostavite u frižider do korišćenja. • Slaganje torte: Pripremiti 1 dl čokoladnog mleka, kakaa razumućenog u 1 dl mleka ili dve kašičice nes kafe razmutiti u mleku - meni je to najdraža opcija :) Prvu koru staviti na tanjir pa u obruč u kome se torta pekla, poprskati je nes kafom pa naneti tamnu kremu. Preko toga staviti drugu koru, poprskati je kafom i naneti svetlu kremu. Tortu ostaviti u frižider na par sati da se stegne pre ukrašavanja, najbolje preko noći. Sutradan, skinuti obruč i tortu ukrasiti ostatkom slatke pavlake pomešanom sa kremama. Originalni recept je objavila Milena (Mily) na Coolinarici. U originalnom receptu se koristi manja količina maslaca za kremu (125 gr), ali se dodaje jedan želatin kako bi je ipak učvrstio. Ja sam tortu pravila i na jedan i na drugi način, podjednako je dobro i bude črvsta, a sada mi je bilo jednostavnije da samo povećam količinu maslaca.
