Una giornata importante vuole un dolce importante. Un dolce importante vuole tanta Nutella. Se poi vi alzate alle 11 oltre a tanta Nutella il dolce importante vuole anche tanta velocità. E così nascono questi Cestini sciué sciué di pasta sfoglia con nutella e chips di cioccolato. So che siete curiosi e vi state chiedendo giornata importante perché? Perché ieri, in barba alle macumbe di mia suocera, di certe ex e di altro parentame a cui la mia relazione con Marco ha sempre dato fastidio (per la serie fatevene una ragione, io esisto e dò fastidio!), io e Marco abbiamo festeggiato i nostri primi 15 anni insieme!!! Ecco che ci voleva un dolce altamente peccaminoso per “festeggiarci”. Della polvere di buccia d’arancia ne parlo qui. Forse non tutti sanno che... pasta sfoglia Già conosciuta da Egizi, Greci e Romani, che la preparavano con olio al posto del burro. Detta anche "sfogliata", è una pasta cotta al forno, leggerissima e molto friabile. La sua lavorazione è piuttosto lunga e richiede una certa attenzione nel manipolare gli ingredienti, affinché l'aria possa inglobarsi tra i vari strati di pasta e burro, per poi dilatarsi durante la cottura con un processo chiamato: "lievitazione fisica". Vogliamo segnalarvi che la prima versione moderna della pasta sfoglia (burro al posto dell'olio), con l'esatta indicazione dei vari "giri", fu ideata da François Pierre de la Varenne. L'impasto deve essere fatto con farina, acqua e burro (nella stessa quantità della farina). La preparazione avviene in stadi successivi (fino a sei) che consistono nel modellamento dell'impasto a strati. Regola fondamentale per la sua buona riuscita è avere gli ingredienti a una uguale temperatura, perché possano amalgamarsi perfettamente. Indispensabile anche il riposo in frigorifero della pasta tra i vari "giri". (tratto da Taccuini Storici) Cestini Sciué Sciué di Sfoglia con Nutella e Scaglie di Cioccolato Ingredienti 1 rotolo rettangolare di pasta sfoglia Nutella Biscotti tritati Polvere di buccia d’arancia (bucce di arance bio non trattate, essiccate e polverizzate) Scagliette di cioccolato Inoltre Latte per spennellare Zucchero a velo Preparazione Preriscaldare il forno a 190°. Srotolare la sfoglia e tagliarla in 8 pezzi. Disporre ciascun pezzo in stampini da crostatine foderati di carta forno. Spolverare con dei biscotti tritati e un pizzico di polvere di buccia d’arancia. Riempire con una generosa cucchiaiata di Nutella. Completare con le scagliette di cioccolato. Spennellare con del latte i bordi della pasta sfoglia e infornare per circa 18 minuti (o sino a doratura della sfoglia). Estrarre dal forno, fare intiepidire, cospargere di zucchero a velo e servire subito. N.B.
