Από την κ. Σοφία Τσιμπίδη. Η κ. Τσιμπίδη η οποία κατάγεται από το Αλιβέρι και ζει στη Σκάλα Λακωνίας μας έδωσε αυτή την υπέροχη συνταγή για παραδοσιακές δίπλες που δίνει μια αρκετά μεγάλη ποσότητα. ΥΛΙΚΑ 30 αυγά 3 φακελάκια μπέικιν 1 φλυτζάνι του καφέ ζάχαρη άχνη 1 φλυτζάνι του καφέ ούζο 1 φλυτζάνι του καφέ ανθόνερο 1 φλυτζάνι του καφέ λάδι 3 κιλά αλεύρι (περίπου). 1/2 κουταλάκι του γλυκού αλάτι. Μέλι για το μέλωμα (όπως θα δούμε παρακάτω) ΕΚΤΕΛΕΣΗ Χτυπάμε τα ασπράδια μαρέγκα και τα κροκάδια μαζί με όλα τα υπόλοιπα υλικά και ζυμώνουμε. Από τη ζύμη που ετοιμάζουμε ανοίγουμε φύλλο πολύ ψιλό. Αν δεν μας βγει ψιλό το φύλλο όταν θα μελώσουμε τις δίπλες θα γίνουν σαν γλυκειά ομελέττα !!! Σε μια πλατεία κατσαρόλα με λάδι που καίει, ρίχνω το φύλλο κομμένο σε μακρόστενα κομματάκια και με δυο πηρούνια το τυλίγω αμέσω ρολό. Είναι μια διαδικασία που θέλει εξάσκηση και ταχύτητα. Μέχρι να καλοτυλίξω το ρολό τις βγάζω από το λάδι γιατί αρπάζουν γρήγορα και τις ακουμπάω σε σουρωτήρι να στάξουν το λάδι τους. Μετά τις τοποθετώ σε λεκάνη και όταν τελειώσω ετοιμάζω το μέλωμα. Προτιμώ να μη βάζω σκέτο μέλι γιατί είναι εύθραυστες και κολλάνε πολύ και τρίβονται. Φτιάχνω λοιπόν κανονικό σιρόπι στο οποίο προσθέτω μέλι δοκιμάζοντας τη γεύση του. Συνήθως όταν κάνω γλυκά του κουταλιού φτιάχνω μπόλικο σιρόπι και βάζω στις δίπλες απ' αυτό. Στις φρέσκιες που έφτιαξα πρόσθεσα σιρόπι από γλυκό περγαμόντο. Καλή επιτυχία !!!

Maille benden dible tarifi isteyen arkadaşlara, bu postumda adım adım diblenin yapılışını fotoğrafladım..Umarım bloguma bakıp haberdar olurlar.. Sağlıklı,güzel bir hafta diliyorum sizlere.. Malzemeler 1 kg çalı fasulye 2 adet domates 2 adet kuru soğan karabiber,tuz 2 yemek kaşığı tereyağ 3 yemek kaşığı zeytinyağ 1/2 su bardağı pirinç 1/2 çay bardağı su Hazırlanışı Yayvan bir tencereye tereyağ,zeytinyağ konulup kızdırılır. İçersine yemeklik doğranmış soğan,rendelenmiş domates,karabiber eklenip suyunu çekene kadar pişirilir. Üzerine kesilmiş fasulyeler,tuz eklenip buğuda pişirilir. Son olarak yıkanmış pirinç ve su eklenip kısık ateşte pişirilir. Piştikten sonra demlendirilip servis edilir.
