Momentos que no se olvidan, que laten incrustados en los sabores que sorprenden, que llenan de dulzura, y armonizan cada pequeño instante en que los sueños se vuelven día a día, un puente hacía la realidad. Sonando bajito..."Candy lady". Ingredientes: 70 grs. de harina de almendra. 20 grs. de miel de agave(pueden usar miel de colmena, de maple, etc.). 1 cdita. de jugo de limón. 30-40 ml. de aceite vegetal. 2 huevos. 50 grs. de almendra fileteada. 1 pizca de sal . 1 cdita. de polvos para hornear (pueden omitirse). Preparación: Batir los huevos hasta esponjar. Incorporar la miel y mezclar suavemente y el jugo de limón. Mezclar con el aceite y seguir mezcando. Incorporar la harina de almendra, sal, polvos para hornear, y la pizca de sal, hasta tener una masa espesa. Al final agregar las almendras fileteadas e incorporar todo. Rellenar cada espacio del molde de madeleines, previamente engrasado con una cucharada de la mezcla. Dejar reposar cinco minutos en la nevera y hornear a 160ºC de 8-10 minutos. Dejar enfriar antes de desmoldar, y dejarlas sobre una rejilla. ** Para golosos: servir acompañadas con una buena cucharada de buena mermelada. El primer recuerdo que viene a mi mente de este bizcochito, es el juego de la hora del té, mi Madre nos llevaba madeleines(compradas), para acompañar nuestro juego de té y mermelada, porque servía el té de verdad, era un ritual que me encantó, desde que mi Padre me hablo sobre las geishas, (como se habrán dado cuenta a pesar de mis esfuerzos por no ser tan obvia, siempre tuve una familia alocada y ecléctica, mezclando ideas, sabores y costumbres varias), de esta forma estos bizcochitos franceses pasaron a ser parte de nuestros juegos alguna que otra tarde. Así que cuando recibí un regalo muy especial y altamente adictivo desde el otro lado del charco, de manos de una persona llena de creatividad, talento y mucha buena vibra, no dude ni un momento en que un tarro de mermelada, sería dedicado a una tarde de té en casa, para consentirnos con buenos recuerdos y sabores que compartimos desde hace años en familia. Esta es mi versión particular de las madeleines, el resultado fue delicioso, no eche para nada de menos, el sabor a mantequilla (si no me vean raro), la harina de almendra y las yemas de huevo son suficientes para dar esa cremosidad que se vuelve un vicio con estos bizcochos, que unidos al jugo de limón le aportan un toquecito ácido que equilibra estupendamente el dulce de la miel de agave. Y ni que decir, de lo crujiente de las almendras fileteadas, un bocadito ideal, que relleno de mermelada se vuelve una tentación que no van a querer evitar. Espero que prueben esta versión de madeleines, pero sobre todo que no se queden sin hacer y probar en casa, estas deliciosas mermeladas que Raúl (El oso con botas), me hizo llegar generosamente desde su Madrid, hasta mi tierra. Solo puedo decirles sobre ellas, que termine yo solita a cucharadas la mermelada de rosas y pistachos, en menos de una semana, que la mermelada de calabaza a la antigua, fue devorada en la semana siguiente por mi familia en bollitos, panqueques y sandwiches de queso. El único tarro que escondí hasta no recordarlo (y me costó no hacerlo) fue esta irresistible mermelada de albricoques y flores de sauco, que es la locura y el toque final para las madeleines, Muchas gracias de nuevo Raúl, serás terriblemente bien correspondido, cuando menos lo esperes. Que tengan un buen fin de semana, lleno de buena vibra!
