Bajadera je jedna od naših najpoznatijih poslastica, obavezna za slave i kraljica sitnih kolača. Vole je gotovo svi, možete je pripremati sa orasima, lešnicima, kikirikijem, a ja se držim verzije sa orasima koja je po meni neprevaziđena. Jednostavna je i brza za pripremu, jedino što morate čekati nekoliko sati da se lepo ohladi i stegne kako bi je mogli precizno iseći. Pravim je po odličnom, proverenom receptu sa bloga Mystic Cakes. Možete je praviti i u posnoj i u mrsnoj varijanti, za mrsnu kopristite maslac, za posnu margarin. Najviše mi se dopada kod ove bajadere to što nema previše šećera, u nekim receptima ide čak 700 g! Ova bajadera ima predivan pun ukus, dovoljno je sočna, malo mekša, nije tvrda ni suva. Čokladni deo je čvršći, zahvaljujući čokoladi, a svetli deo je mekši tako da se stvara utisak kao da je to zapravo fil, što ovu bajaderu čini specifičnom u odnosu na ostale. Zanimljivosti: Bajadera je pojam portuglaskog porekla, od reči bailadeira, u prevodu znači plesačica, odnosno javna igračica iz Indije. Ako vam treba još ideja za fine, jednostavne, sitne kolačiće bez pečenja, probajte sledeće recepte: domaći ferrero, posni raffaello, šarena oblanda,kasato kuglice,svekrvino oko. Sastojci: 200 ml vode 250 g šećera 1 kesica vanila burbon šećera 200 g maslaca ili margarina 300 g mlevenog keksa (koristim plazmu, mrsnu ili posnu) 300 g mlevenih oraha 150 g čokolade za kuvanje (koristim od najmanje 49 % kakao delova) Glazura: 100 g čokolade za kuvanje 25 g maslaca ili margarina 3 kašike ulja Priprema: Smese uvek pravim odvojeno da bi oba sloja bajadera bila iste debljine. U šerpicu nasuti 100 ml vode i 125 g šećera. Staviti da se kuva. Kad provri, smanjiti temperaturu na srednju i kuvati 5 minuta. Skinuti sa ringle, dodati 100 g iseckanog maslaca na kocke i mešati dok se ne otopi. Dodati i 150 g čokolade, mešati da otopi, na kraju dodati 150 g mlevenog keksa i 150 g mlevenih oraha. Ostaviti nekoliko minuta da se smesa prohladi, zatim prebaciti u pleh 30x 20 obložen pek papirom, poravnati špatulom. Dok se ovaj sloj hladi, pripremamo na isti način drugi- svetli sloj ali ovog puta bez čokolade. Dakle, ušpinovati 5 minuta vodu i šećer, skinuti sa ringle, dodati maslac, mleveni keks, melevene orahe i 1 kesicu vanila burbon šećera. Izmešati i prohladiti nekoliko minuta, zatim ovu smesu ravnomerno rasporediti preko tamnog sloja, poravnati špatulom. Za glazuru otopiti na laganoj temperaturi čokoladu, maslac i ulje, odmah preliti preko bajadere, razmazati špatulom, prodrmajte pleh levo- desno- gore- dole da bi se glazura lepo poravnala. Odložite u frižider na hlađenje, najbolje bi bilo preko noći. Sečenje bajadere: Ja imam secka za kolače koji mi mnogo olakšava posao i svi kolačići budu savršeno isečeni. Inače, sasvim lepo i precizno može se iseći skalpelom, pogledajte čoko štangle sa kupinama, čoko rum rozen kolač, vanila rozen štangle sa malinama ... Pre sečenja izvadite bajaderu da odstoji 10 minuta na sobnoj temperaturi. Uz pomoć lenjira izmerite parčad 4x2 cm, skalpelom označite gde ćete spajati linije, stavite male crtice. Prislonite blago lenjir na glazuru, nemojte pritiskati da vam ne ostanu tragovi, pa vucite linije po označenim mestima do 2 mm dubine. Kada ste zasekli parčad pređite još jednom skalpelom i isecite ih skroz. Nakon svakog povlačenja skalpel izbrišite ubrusom.

Prvi su često na repertoaru jer se uglavnom veoma brzo i jednostavno pripremaju, a drugi su izbor jer se trudim da imam neki balans kada je reč o slatkišima i ako ih već jedem, često to bude zdravija varijanta. Za Ferrero kolač sa piškotama, potrebno je samo pola sata i nekoliko sastojaka. Naravno, neophodno je i stpljenje da se kolač dobro rashladi i to je često najteži deo "posla"! Ferrero kolač sa piškotama Sastojci: 200 ml slatke pavlake 200 g krem sira 300 g čokoladnog krema 50 g lešnik napolitanki 50 g mlevenih pečenih lešnika 250 ml čokoladnog mleka 300 g piškota 100 g čokolade 3 kašike ulja 3 kašike mleka Priprema: 1. Slatku pavlaku sipati u činiju pa je mikserom umutiti. Potom dodati krem sir i čokoladni krem (koristila sam Milka krem) i opet kratko izmiksirati da se smesa poveže. 2. Napolitanke iseckati a pečene lešnike samleti. 3. Manji pleh (20x20 cm) obložiti providnom folijom. Piškote potapati u toplo čokoladno mleko pa ih poređati na dno pleha. Potrebno je da se dobro natope, jer ne bi omekšale samo od kreme. Preko piškota sipati polovinu kreme. Preko kreme posuti polovinu usitnjenih napolitanki i lešnika. Zatim još jednom ponoviti postupak dok se sastojci ne potroše. Kolač "zatvoriti" poslednjim slojem piškota, tako da na kraju bude dva sloja kreme i tri sloja piškota (meni je u ovom koraku zafalilo piškota, pa sam upotrebila plazma keks). Ostaviti kolač u frižider na nekoliko sati da se dobro rashladi i stegne. 4. Kada se kolač rashladi, na pleh nasloniti tanjir za serviranje, sve okrenuti naopačke tako da kolač bude na tanjiru. Skinuti foliju i preko kolača sipati toplu čokoladnu glazuru (sve sastojke za glazuru prethodno otopiti na pari). Preko glazure posuti mlevene lešnike. Kolač ponovo ostaviti u frižider da se glazura stegne a onda iseći i servirati.

Actually this Croatian doughnuts/Fritule, also called Uštipci, is a festive Croatian pastry resembling little doughnuts, made particularly for Christmas. They are somewhat similar to Italian zeppole and venetian Frìtole, but are usually flavored with brandy and citrus zest, containing raisins, and are topped with powdered sugar.Its adviced to fry this fritters in small batches in medium flame, these fluffy doughnuts are dangerously addictive.
