Il y a quelques jours, je vous donnais la recette du gâteau mousseline marbré. C'est en réalité un chiffon cake, mais je trouve que son nom est quand même bien plus joli en français. L'anglais ne rend pas vraiment hommage à ce délicieux gâteau. C'est un gâteau très léger et tout moelleux que j'adore. Cette fois, je voulais un gâteau mousseline au citron. J'ai substitué à l'eau un mélange de jus de citron et de lait. La texture de la pâte est légèrement différente, tout aussi moelleuse, mais plus humide et délicatement parfumée au citron. J'ai imaginé un gâteau mousseline plus festif. Je l'ai donc tartiné d'une fine couche de confit de citron afin de renforcer le goût du citron et je l'ai décoré de meringue italienne, à la façon d'une tarte au citron. C'est simple et délicieux! Gâteau mousseline au citron: (D'après Dolci Gusti) 300 g de farine (typo 00) 1 sachet de levure chimique 250 g de sucre 1 pincée de sel 7 œufs 130 g d'huile de tournesol 100 g de lait tiède80 g de jus de citron Préchauffer le four à 160°C, chaleur statique. Tamiser la farine et la levure. Ajouter le sucre et le sel. Mélanger. Faire un puits et ajouter les jaunes d’œufs, l'huile et le lait. Mélanger. Ajouter le jus de citron. Mélanger. Monter les blancs en neige ferme puis les incorporer délicatement à la pâte à la spatule et en plusieurs fois. Ne pas graisser le moule. Verser la pâte à l'intérieur. Faire cuire pendant 50 minutes à 1 heure. A la sortie du four, retourner le gâteau sans le démouler et le laisser refroidir ainsi. Meringue italienne: 60 g de blancs d’œufs (2) 120 g de sucre 30 g d'eau Mettre l'eau et le sucre dans une casserole et porter à 116°C. Quand la température atteint 110°C, commencer à monter les blancs. Verser le sirop en filet sur les blancs tout en continuant à fouetter. Fouetter encore pendant quelques minutes. Mettre la meringue dans une poche munie d'une douille lisse. Montage: 1 cs de confit de citron (recette ici) Démouler le gâteau. Tartiner le dessus d'une fine couche de confit de citron. Pocher dessus la meringue, puis la brûler légèrement au chalumeau. Pour finir: j'ai très longtemps désiré ce type de moule et j'ai enfin réussi à trouver celui-ci. Il est très gros et son fond est amovible, ce qui rend le démoulage très simple. Je l'adore et je m'en sers beaucoup, notamment pour faire des brioches. A défaut de ce moule, vous pouvez en utiliser un autre, ou même deux. Il faudra simplement adapter les temps de cuisson. Comme la farine typo 00 me réussit plutôt bien, j'ai continué à l'utiliser. Vous pouvez aussi prendre une T45.
