Le duo chocolat - coco n'est plus à prouver, on sait que c'est excellent. Imaginez donc un épais gâteau avec en dessous une belle chocolat de gâteau au chocolat surmontée d'une autre belle couche mais à la noix de coco. C'est le dessert que je vous propose pour cette rentrée. Un gâteau ultra réconfortant et gourmand. Ingrédients : - 4 œufs - 200 g de chocolat - 120 g de sucre roux (ou vergeoise) - 100 g de beurre - 50 g de farine - 20 g de Maïzena - 1 cuillère à café de levure chimique - 160 g de coco râpée - 200 ml de crème de coco (ou lait de coco) - 150 g de lait concentré sucré . Pour le glaçage - 100 g de chocolat noir - 100 g de crème liquide entière à 30% de matière grasse - 1 peu de coco râpée Préparation : Commencez par préparer le gâteau. Préchauffez le four à 150° C. Dans un saladier, mélangez la noix de coco, la crème (ou lait) de coco et le lait concentré sucré. Puis réservez. Dans un saladier, versez les œufs et le sucre puis fouettez le tout pendant 5 minutes à vitesse 3 puis 4. Le mélange doit tripler de volume. Pendant ce temps, mettez le chocolat et le beurre à fondre au micro-ondes. Veillez à ne pas le surchauffer. Ajoutez la farine, la levure et la Maïzena dans le chocolat fondu et mélangez. Versez la pâte au chocolat progressivement dans les œufs montés tout en laissant le batteur à vitesse 1. Déposez dans le fond d'un moule beurré du papier sulfurisé préalablement découpé à la taille et à la forme du moule. Tapissez le fond de pâte coco puis versez la pâte au chocolat. Faites cuire le gâteau pendant 50 à 55 minutes. Plantez la pointe d'un couteau pour vous assurer de la cuisson. Il doit y avoir un peu de dépôt mais pas de pâte crue. Si c'est le cas, prolongez la cuisson de 5 minutes. Sortez le gâteau du four, laissez tiédir puis démoulez. Laissez le gâteau retourné croûte vers le bas. Préparez ensuite le glaçage. Faites fondre le chocolat et la crème par tranche de 30 secondes au micro-ondes. Vous devez obtenir quelque chose de lisse et brillant. À l'aide d'une cuillère à soupe, versez le chocolat progressivement sur les côtés puis sur le dessus du gâteau. Cette astuce vous évitera de gaspiller du chocolat.
