In this blog, I will share with you a New Zealand Meat Pie Recipe that is extremely delicious. It's wrapped in a crispy, golden crust. People really like these handy pies for their good taste and ease.
1. Halve the leek lengthways, trim and cut into strips 1cm wide. 2. Melt the butter in a saucepan, add the leek and cook over medium heat until soft, about 15 minutes. Remove from the heat and let cool. 3. Wash the spinach and remove the thick stems. 4. Set aside about 50g of the leaves. 5. Blanch remaining spinach along with the parsley (with stems) for 10 seconds in boiling, salted water. Strain and immediately submerge in ice water. Firmly press to remove all liquid. 6. Purée the leek, spinach-parsley mixture, cream and 75ml of water with a stick blender or in a blender until creamy. Season to taste with salt. 7. Halve the fennel, remove the stalk and cut the bulb into thin slices. 8. Trim the spring onions and cut in half widthways. 9. Warm the olive oil in a large frying pan over a medium heat, add the spring onions and fennel and fry very lightly for 3 minutes. Season with salt, transfer to a plate and set aside. 10. Add the remaining spinach and 1-2 tablespoons of water to the same pan. 11. Sprinkle with salt and distribute first the spinach-parsley mixture and then the fennel and spring onions evenly over the spinach. 12. Coarsely grate the kashkaval cheese and 20g of the parmesan and scatter over the vegetables. 13. Using a spoon, make six small wells and break 1 egg into each. Salt well, especially the egg yolk, cover and cook for 4–5 minutes. The egg whites should be firm but the yolks still runny (like a poached egg). 14. Grate extra parmesan over the eggs. 15. Drizzle with olive oil and serve with fresh sourdough bread.

1. FOR THE BASE 2. Preheat the oven to 170℃ and line a 24 x 24cm tin with baking paper, making sure enough comes up the sides to pull the slice out later. 3. Melt the butter, honey and sugar together in pot over a low heat, then stir in the remaining dry ingredients. 4. Spread into the tin using a spatula to flatten it and bake for 10 minutes or until lightly golden and slightly puffed. 5. Leave to cool at room temperature. 6. FOR THE TOPPING 7. Melt the honey and butter together in a pot. 8. Whisk in the icing sugar and ginger until you have a smooth and thick icing, tasting and adjusting the ginger and honey to taste. 9. You want the icing to be thick enough that it will just about hold its shape, but still runs slightly. 10. Pour over the cooled slice and leave to set in the fridge for half an hour. 11. Once set, cut into long finger slices, mine were 2½ x 12cm. 12. FOR THE ROAST KŪMARA AND TO SERVE 13. Preheat the oven to 180℃. 14. Peel the kūmara and cut into cubes about 1½ x 1½cm. 15. Put on a lined baking tray, pour over the honey and place cubes of butter in between. 16. Bake for 15 minutes, mixing every 5 minutes, until the kūmara are cooked and the outsides are slightly crisp. 17. Leave to cool. 18. Top the slice with the cooled kūmara, and decorate with edible flowers and fresh thyme leaves.

1. Preheat the oven to 170°C fan bake. 2. Place the pastry sheets onto lined baking trays and prick with a fork. 3. Lightly sprinkle with icing sugar, then bake for 15-20 minutes or until golden. 4. Remove from the oven and cool, then trim to fit a 25cm square baking tin. 5. Reserve the pastry offcuts for nibbling with a coffee. 6. Line the baking tin with baking paper, ensuring there is enough hanging over the sides of the tin to allow you to lift the slice out once it has chilled. 7. Place one of the pastry sheets in the lined tin to form the bottom of the slice. 8. Heat together the milk, cream, 2 tablespoons honey, sugar and vanilla in a saucepan until just below boiling point. 9. Whisk together the egg yolks and cornflour and gradually whisk in the hot milk mixture. 10. Return mixture to the saucepan and heat, whisking constantly, until a thick custard forms. 11. Pour the hot custard into the tin and top with remaining cooked pastry square. 12. Press down gently then place in the fridge to set overnight. 13. Remove slice from the tin. 14. Gently heat the remaining honey in a small pot then drizzle over the slice. 15. Sprinkle with sea salt. 16. Use a serrated knife to gently cut into pieces.

If you're heading to New Zealand, be sure to try some of our much-loved and iconic Kiwi cuisine. Although there are some similarities to Australian and British, New Zealand has some very distinct foods that are must-tries as you can’t find them anywhere else! Here are ten of our top favourite Kiwi foods to try in New Zealand: Hokey Pokey ice cream No trip to the beach is complete without our most well-loved ice cream flavour. Hokey Pokey is a creamy vanilla ice cream flecked with golden nuggets of honeycomb toffee. Tip Top ice cream is the most popular in New Zealand and any flavour made by them is a winner. If you go for a double scoop, try Goody Goody Gum Drops as well. It’s another unique Kiwi taste made up of a green bubble gum flavour bursting with gumdrops. Meat pies A popular on-the-go meal for many Kiwis, pies are hand-sized pastries filled with meat and gravy. Mince and cheese is always a classic and even better when paired with Watties tomato sauce. A good pie should have golden, flaky pastry on the outside. You can find hot pies from any bakery, dairy, supermarket and service station. My all-time favourite pies in the country are from Fergbaker in Queenstown (next door to Fergburger). NZ Chocolate & Lollies New Zealand sure knows how to do chocolate and you can’t go wrong with any made by the biggest and most-loved brand, Whittakers. Their family-sized blocks come in many delicious and unique flavours. If you like nuts, go for a classic bar-sized Whittaker's peanut slab. Other special Kiwi chocolate to try include Moro Bars, Crunchies, Pineapple Lumps, Jaffas, Pinkys, Perky Nanas, Buzz Bars and Chocolate Fish. If you like your lollies then don't miss K bars, Mackintoshes, Jet Planes, Milkshakes, Eskimos and Minties, to name a few. Seafood With 15,000 kilometres of coastline, it should be no surprise that freshly caught seafood is a common staple in many Kiwi’s diets. Whitebait fritters, paua, Bluff oysters, crayfish and greenshell mussels are favourites unique to New Zealand. Classic fish and chips are a popular takeaway meal for Kiwis and great to share on the beach in fine weather. Pavlova Still a sore topic for many Australians, it was recently proven that the humble pavlova did, in fact, originate in New Zealand. It’s a favourite Christmas Day and summer dessert made of meringue and impressively topped with whipped cream, fresh strawberries, kiwifruit and anything else you may like. It is perfectly paired with Hokey Pokey ice cream. Hāngī Eating a Hāngī meal is an amazing experience that you should keep an eye out for. It's a traditional Maori way of cooking, underground in a pit. Roast dinner style ingredients are used, such as lamb, pork, chicken, potato, kumara (sweet potato) and pumpkin. The cooking process takes many hours and makes the food tender and delicious with an earthy, smoky flavour - it's the best roast you'll ever have! Rotorua is a great place to try Hāngī. L&P “World famous in New Zealand” as the saying goes, L&P or Lemon and Paeroa is the most iconic fizzy drink in New Zealand. It’s similar to lemonade with its own unique twist. Created in the small town of Paeroa in 1907, it was originally made with lemon juice combined with carbonated water. Now manufactured by Coca-Cola, it’s a very refreshing soft drink that is perfect on a hot day. There's even a giant statue of an L&P bottle in the town of Paeroa. Bakery Goods & Biscuits While you're in NZ, go nuts at our bakeries. They're full of delicious baked goods and are an inexpensive option for a sweet snack. Try our custard squares, lamingtons, cream doughnuts, lolly cake and caramel slice to name a few. Some Kiwi biscuits to look out for at a local supermarket include any Griffin's Biscuits, such as Mallowpuffs, Toffee Pops, Gingernuts and Squiggles. Other Kiwi faves include Cookie Times, Afghans and ANZAC biscuits. Marmite & Vegemite Different than the British version, New Zealand’s Sanitarium Marmite is a standard item in most Kiwi’s pantries. It’s a yeast extract spread combined with a few herbs and spices. Try it on a sandwich with some Bluebirds chips, Kiwi as. When the Christchurch earthquake damaged the company’s factory, a Marmite shortage was declared which prompted a national panic. Similarly, the Australian Vegemite is another much-loved yeast spread in New Zealand. A small piece of advice with both spreads: less is more and use plenty of marge. Kiwi Chips & Dip Another must-try is the classic combo of Kiwi Onion Dip with Bluebird chips (Green Onion is a choice Kiwi flavour). It's a regular at parties or perfect as an afternoon snack. This is the number one thing I missed when living abroad and would often ask family to send it to me.
