I serve these delicious potato patties (kookoo sib zamini) either as a side dish or as a main dish for a light lunch or dinner. Fried vegetable and egg dishes are called kookoo/kuku in Iran. There are different variations of this recipe. کوکو سیب زمینی (Kookoo Sib Zamini) is a great dish to bring to your next picnic! Kookoo Sib-Zamini - Persian Potato Patties Ingredients: Yield: 14 potato patties 5 large potatoes 2 large eggs 1 small yellow onion, grated, discard the juice 2-3 tablespoons bread crumbs 1/2 teaspoon turmeric 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 cup vegetable oil for frying Method: Place potatoes in a large pot, add water to cover by a couple of inches, boil on medium-high heat until fork-tender. Drain and set aside to cool. Peel the potatoes and grate them. Beat the eggs in a large mixing bowl, add the potatoes, onions, turmeric, bread crumbs, salt, and pepper. Stir well to combine and refrigerate the mixture for an hour. Make small patties, flatten them in an oval or round shape. You can also spoon the potato mixture into the oil. Heat the oil in a large nonstick frying pan over medium-high heat. Fry potato patties on both sides until light brown. Drain on paper towels. Serve warm or at room temperature with fresh herbs, pickles, olives, yogurt, and warm bread. *Note: Add a handful of chopped parsley or a teaspoon of dried dill to the mixture if you like. Enjoy!
When I visited England for the first time, I could not believe how inexpensive Indian food was! Compared to the rest of Europe, it was dirt cheap. I had some of the most delicious Indian meals from take-out restaurants in Great Britain (with some of the best garlic naan I have had), believe it or not. Since I was still a student at the time, I greatly appreciated not having to shell out and stay within budget (while enjoying excellent meals).

Orzo pasta is a non-negotiable staple in my kitchen. Simply dressed in butter and salt, and maybe a dusting of nutmeg or grated Parmesan, or indeed both, it often serves at my table as a substitute for rice or potatoes, and I regularly use it to cook what in Italian is pasta risottata, a kind of pasta risotto. It makes for wonderful, cosy one-pot dishes, of which this is a pre-eminent example. For US cup measures, use the toggle at the top of the ingredients list.

Dear SOS: I'm not a fan of cauliflower, but on a recent trip to Napa I dined at Ad Hoc and had the most amazing side dish of rice with roasted cauliflower. I would love the recipe.Sainam Khan Culver CityDear Sainam: This deceptively simple dish contains a wealth of layered flavors. Roasting the cauliflower concentrates the vegetable's flavor while softening it to buttery tenderness, the rich caramelization complemented with a sprinkling of earthy curry powder. Tossed with rice spiced with a pinch of chili flakes, the dish is finished with bright crunch from fresh green onion. A perfect harmony in every mouthful.
