I actually wasn't planning on doing a post like this, but I've had several new-in-the-past-year readers ask if I would. Part of me thought that a list like this would be boring to read, but then I realized how much I've been enjoying seeing these posts on the blogs I read, especially those I haven't followed very long. So, here you go! If you're fairly new here, I hope you have fun seeing a bit of what we were up to around here this past year. And if you've got your own little personalized butt-groove carved out on my couch because you've been here so long, then see if you remember these posts and if any of them would make your list! 1. Zoey and Sassafras - Book Review and Free Activity! A publisher learned of my love of books in late 2016 and asked if I would be interested in doing the occasional book review here on the blog and I've been in hog heaven ever since. That one publisher grew to several and Gv and I have had such a blast discovering new titles all year long. I'm not at all surprised that my review of the Zoey and Sassafras series showed up on this list, because it was easily our favorite new find of 2017! 2. Peg + Cat: A Totally Awesome Way to Introduce Math to Your Preschooler! When Pam Barnhill asked me to join her team last year, I knew I'd somehow have to introduce the world to Gv's favorite show and all the amazing ways it helps preschoolers learn math concepts! Not only was this post wildly popular, but my post on Gv's Peg + Cat Birthday Party was as well! 3. Love Jars: A fast, frugal gift idea for your sweetie! I'm always making gifts for G, like this Hubby Calendar, our Passport to Fun trips, or this great Year of Fun Box, but last year's Love Jars gift was probably the easiest one yet and I've heard scads of you raving about how much you've profited from this simple idea in your own homes! 4. Preschool Math at Home I raved about this book on my 5 Easy Ways to Incorporate Preschool Math Into Your Days post on Pam's site and was tickled pink when the author contacted me and asked if I'd be interested in working with her on future projects. Ummm, yes! I excitedly wrote up a review on this early-learning book and am anxious to share further details about her other fantastic books in the near future! 5. Fabulous Fairy Tales I'd been hearing that many people steer away from spending too much time with fairy tales (due to worry regarding their seemingly scary nature), so that prompted me to do some research on the subject. I ended up learning far more than I ever expected and most of you were surprised to learn what I shared as well. 6. How Do Dinosaurs...Social Skills Game (with free printable!) We had lots of fun continuing our book activities this year. Although I mentioned in this recent 2018 Goals post that we would not be participating in this project for the foreseeable future, I'm sure I'll still be coming up with fun activities that you love like this again. 7. Ladybug Girl Addition Bugs This was another post that was part of the monthly crafting book club. I'm so used to coming up with center activities like this from my classroom days that this idea didn't seem that out of the ordinary to me, but boy, did you all love it, since it's so simple and fun! 8. 10 Ways to Make Nursery Rhymes More Fun! I was surprised to learn that not everyone is familiar with nursery rhymes these days, so of course that meant I felt the need to write about it! Many of you were excited to read this post and loved learning new ways to incorporate nursery rhymes into your child's days. 9. Friday Frivolity - Decluttering Edition Friday Frivolity parties are always well-attended and such fun, but this week that was focused on decluttering had the most views out of all of them! 10. The Ultimate Guide to Doing Preschool at Home (Everything you need to get started!) The top post of the year, which made complete sense since it was so jam-packed full of amazing resources and hints on how to do preschool yourself at home. Nutella- it is a dangerous thing to have in my house. While I do not like just chocolate by itself, something about this creamy hazelnut flavor has me hooked and I find myself going to the cabinet taking out tiny spoonful's to satisfy my sweet craving. So, I generally try to keep it out of the house. Yum However, I knew we were headed for a visit to our boys college and I wanted to make them something easy to share with their roommates. They love my SCOTCHAROOS but I wanted to jazz them up a bit with the Nutella. I result was a HUGE HIT!! Today, I bring you this treat of a recipe PLUS I'm over at The Blended Blog today sharing a Thanksgiving recipe and Link-Up for Tasty Tuesday! What you'll need However, I knew we were headed for a visit to our boys college and I wanted to make them something easy to share with their roommates. They love my SCOTCHAROOS but I wanted to jazz them up a bit with the Nutella. I result was a HUGE HIT!! NUTELLA SCOTCHAROOS Ingredients 6 cups Rice Krispie cereal 1 cup white sugar 1 cup Karo Syrup 1 1/2 cups creamy Peanut Butter 1/3 cup Nutella 1/2 cup semi sweet chocolate chips 1/3 cup butterscotch chips 1/3 cup peanut butter chips Directions Spray a 9x13 pan with baking spray. In a large stock pan, heat the Karo and sugar until the sugar is dissolved and it just starts to boil. Do not bring to a rolling boil or boil too long or your Rice Krispies will be hard. Remove from the heat, add the peanut butter and stir well. Add to Rice Krispies and mix until well coated and press in the bottom of a greased 9 x 13 dish. In a small saucepan, over medium low heat, add the Nutella and all the baking chips and melt until smooth. Poor evenly over the cereal mixture and let stand a couple hours until the chocolate hardens up. Cut into desired squares and enjoy. HAPPY TASTY TUESDAY FRIENDS!! I love homemade tortillas, but sometimes I just want something quick! These tortillas do the trick! Some of the links on this site are affiliate links. I absolutely love my homemade tortilla recipe, but so often I just don't have the time am too lazy to wait around for the dough to be ready and then press it out. To be honest, what really ends up happening is that it's time for me to make dinner and I suddenly have the bright idea to make burritos. If I don't have a stash of these in the freezer (who am I kidding, we never have any in the freezer, because even if I do make a double batch, we gobble them all up before I can freeze them!), I'm up a creek unless we want to eat dinner at midnight... So I was really excited to fiddle with this idea and see if it would make a good substitute. G actually says he loves these even more than my standard recipe. I still prefer the others, but these are still so good, I end up making them three times more often. The best thing about these tortillas is that you merely give the ingredients a swirl, then pour them out onto your griddle. The only time-intensive part of making these bits of wrapping goodness is waiting for them to cook! What You Need (Feel free to cut these amounts in half, but trust me, you'll wish you'd made more!) 2 1/2 cups whole wheat flour 1/2 cup grits (or cornmeal, but we always use grits for everything) 3 cups whey (I always have this on hand, but if you don't, just use chicken stock) 2 eggs 1 teaspoon garlic 1 teaspoon salt 1/4 cup total of any combination of the following: hemp, flax, wheat germ, more cornmeal or flour What You Do 1. Zub everything in your Ninja (or food processor, or blender, whatever you use to mix things up quick & easy) 2. Swirl a little oil in a pan or over your griddle (I generally use either a cast iron or electric skillet) 3. Pour out just enough batter to coat the surface of the pan when you give it a little twirl. I generally use 1/4-1/2 cup of batter, depending on my pan size. If I'm using my electric skillet, I use the bottom of a measuring cup to spread it all (lightly) around, but if I'm using the cast iron pan, I give my arms a workout and just fling the thing around to get the bottom all coated. 4. Cook these on medium-low heat. When the edges start to curl up a bit, flip the tortilla over and cook the other side until it's as done as you'd like. I usually leave mine on for a couple of minutes on each side. We use our little induction cooktop like crazy! You can use this for anything calling for a tortilla. Most of the time, I just caramelize an onion, add in a handful of chopped garlic, then a can of butternut squash and another of black beans with some cumin, cayenne, and salt and call it a day. We stuff our tortillas full of that mixture along with some cheese, salsa and a little yogurt and our bellies are full in no time! A little guacamole never hurts, either! A soft and fluffy sweet buns recipe using water roux (tangzhong) method. Tangzhong Sweet Buns is a basic recipe that can be transformed into honeycomb buns, pull apart bread, chocolate, cinnamon rolls or stuffed with either sweet or savory filling. Before proceeding to bake this bread, prepare the tangzhong. You need to cool the water roux before adding it to the dough. These buns need to rise twice, one after kneading into smooth ball and immediately after shaping them. If you intend to turn into honeycomb buns, shape into a tiny ball and stuff with sweet or savory filling. Place these balls in a concentric circles. After baking, pour sugar syrup or butterscotch sauce on top if you're using a sweet filling. As for cinnamon rolls, roll out the dough into a rectangle, spread with butter, sprinkle with cinnamon brown sugar mixture evenly over the dough, leaving 1/2 in border all around, roll up and cut into 1 in thick slices. Tangzhong Sweet Buns turned out fantastic, remarkably soft and very flavorful. Importantly the dough is also very manageable, very nice dough to work with. Other bread recipes you might want to try: Banana Yeast Tartlet. Monkey Bread From Scratch Stuffed Bread TANGZHONG SWEET BUNS RECIPE Yield : 15 buns TANG ZHONG 1/2 cup water 25 g all purpose/bread flour DOUGH 2.5 cups bread/ all purpose flour 2 tablespoon dry milk 1/4 cup sugar 1 tsp salt 2 tsp instant yeast 1/2 cup milk 1 large egg 1/4 cup (4 Tablespoon) melted butter DIRECTIONS Prepare the tangzhong by combining all ingredients in a small pot. Whisk until no lumps. Cook the mixture using low heat. whisking until thicken about 3-5 minutes. Remove and let it cool. To make the rolls, combine tangzhong with the rest of the ingredient. Mix and knead by hand, mixer or bread machine until smooth and elastic. Shape into a ball. Place the dough in a greased and covered bowl for 60-90 minutes until double in size. Gently punch the dough, divide and shape into 15 equal balls, place the rolls in a baking sheet. Cover and let the rolls rest until puffy for 40-50 minutes. Preheat oven @ 180 C, brush the rolls with milk or egg wash and bake for 20-25 minutes until golden brown. Transfer onto rack to cool completely.
