Hello my foodies!! Today, I came back with a recipe for a cake that I shared on my Instagram and you loved it. It's a cream cheese and lemon cake from @jadore________. I'm a big fan of lemon cake, I love the tangy taste that lemon brings. In this recipe, the cream cheese will bring more softness and lightness. I haven't tested it yet, but I know it's very good. LEMON CREAM CHEESE CAKE RECIPE Pound cake dough Recipe for 8 mini cakes 130g unsalted butter 110g of Philadelphia cream cheese 145g granulated sugar 1 g salt 120g of eggs 34g of egg yolk 170g cake flour 5g baking powder 17 g lemon juice 4g lemon zest (about 1 large lemon) Beat soft butter and cream cheese at room temperature with a hand mixer. Add the sugar, lemon zest and salt, whisk well until the colour becomes white and shiny and voluminous. Mix the egg at room temperature and the yolk well, divide it several times, add it to the dough while continuing to whisk it. Sift the flour and baking powder and mix with a spatula. Add the lemon juice and mix well. Fill the dough to 80% of the pan and bake in a preheated oven at 160Β°C (320Β°F) for 22 minutes (convection oven). Lemon glaze 155g powdered sugar 30g lemon juice Mix the icing sugar and lemon juice. Put it in a piping bag and sprinkle as much as you like over the cooled cake. Leave it at room temperature for 10 to 20 minutes to allow it to dry naturally. * Storage: to prevent it from drying out out, store in an airtight container. What Pretty Valentine's Day Sweets can you make with 2 Egg Whites and some Sugar? Pretty Pink Meringues! Meringues are so easy and inexpensive and you can pipe them in so many pretty shapes. You can add mini chocolate chips or nuts to them or sprinkle them with pretty sprinkles! Here are the meringues before baking. They look pretty much the same after baking - they just aren't as shiny. I love to get creative with meringues and thought they would look cute piped into mini cupcake papers. It makes them look like some yummy looking treat that you would find in a Bakery! Pretty Pink Meringues Ingredients: 2 egg whites - room temp 1/2 cup sugar pinch of salt pinch of cream of tartar pink food coloring mini cupcake liners Directions: Preheat oven to 200 degrees. In the bowl of a mixer and using the whisk attachment beat the eggs till foamy. Add salt and cream of tartar and beat until soft peaks. Add sugar gradually beating until the batter is stiff. Add your food coloring and beat until incorporated. Spoon or Pipe mixture (I used a Wilton 1M Tip) onto parchment lined baking sheets or pipe into mini cupcake liners swirling around as you pipe. Bake for at least 2 hours or until crisp. (to test take one meringue out of the oven and let it cool for a few minutes then try it) In order to keep Meringues crisp, they must be kept in an airtight container as soon as they cool. If you're giving these as gifts just put them in some clear bags with a pretty label and ribbon. Hope this recipe gives you some inspiration!! Have a Happy Valentine's Day!

This week I tried my hand at Sugared Violets and used them to top my pretty Violet Macarons! It's really easy to do - just brush some egg whites on your violets, then sprinkle them with superfine sugar and let dry. Just make sure that your Violets are the edible kind! The Macarons aren't Violet flavored - just a pretty Violet color! I used a recipe called Best Vanilla Frosting from Best Friends For Frosting. So good!! VIOLET MACARONS Macarons adapted from Macaroons & Biscuits Buttercream from Here For the Macarons: 3 egg whites, room temp 1/4 cup (55g) superfine sugar violet food coloring pink food coloring 1 1/4 cups (200g) powdered sugar 1 cup (120g) ground almonds For the Buttercream: 1 cup (2 sticks) unsalted butter, softened 6-8 cups powdered sugar 1/2 cup milk 2 tsp vanilla extract (I used clear- no color) violet food coloring pink food coloring Line 2 baking sheets with parchment paper. Using whisk attachment, beat egg whites with electric mixer until soft peaks form. Add superfine sugar a little at a time and food colorings. I used a combination of the violet and pink to get the color I wanted. Beat until sugar dissolves, then transfer to a large bowl. Fold in sifted powdered sugar and ground almonds in 2 batches. Spoon Mixture into a piping bag fitted with a 3/4" plain tip. Pipe 1 1/2" rounds about 3/4" apart onto trays. Tap trays so Macarons spread slightly. Let stand 30 minutes. Meanwhile, preheat oven to 150C/300F. Bake Macarons about 20 minutes. Cool on trays. Prepare Buttercream: In the bowl of an electric mixer fitted with a paddle attachment, combine butter, 4 cups powdered sugar, milk, vanilla extract and food colorings. Beat on medium speed until smooth and creamy, 3-5 minutes. Gradually add remaining sugar, 1 cup at a time, beating for about 2 minutes after each addition, until icing reaches desired consistency; you may not need to add all of the sugar. Sandwich Macarons with buttercream. If using sugared violets, pipe a tiny amount of buttercream on top of macarons, then the add a Violet. Love the soft Violet color! Thanks for visiting!!
