I got this recipe from the Mennonite Treasury and usually make it with apples, but lately I’ve liked using a combination of blueberries, raspberries and blackberries. I also like to make a larger batch of the crumble mix (times it by four) and freeze it for a quick dessert another day. Most times I add slivered almonds or chopped pecans. Ingredients: 3 - 4 cups berries or chopped apples (Granny Smith or Graffensteins are good) 1/4 cup butter 1/4 cup brown sugar, packed 1/4 cup flour 3/4 cups rolled oats Method: Place fruit in a pie size baking dish. Blend the rest of the ingredients with a pastry blender until all the butter is blended in to make a crumb mix. Squeeze to make larger chunks as you sprinkle it over the fruit. Bake at 350 F about 30 min. Serve hot, with ice cream. Serves 4-6 PS The crisp in the photo is baked in individual serving dishes.

My hubby asked me once to make a corn pudding just to try it out. Well I had no idea how to make one so after searching many recipes out, I couldn't find one that I really liked to try. So I found several that I combined together and made my own. I use either frozen corn or canned corn for my recipe, but if you want to get creative and use fresh corn go for it. I, however, didn't want to husk all that corn that is needed. This is a classic recipe and it has a rich, souffle-like texture without the hassle of shucking corn.

No dairy or fish oil in this one! (Burping up fish oil is totally the worst) In my opinion, walnuts are the best tasting source of ALA Omega-3's. I've always liked smoothies, but they seem to make me crash mid-morning. This smoothie has no added sweetener and the walnut oil makes it a little more filling. It adds a really nice nutty flavor that melds well with the fruit. Plus, the oil is packing 1.4 grams of Omega-3's! One note about nutrition information accuracy... If you use a cranberry juice from concentrate or a vanilla flavored almond milk, it will make a difference so be careful!

My grandparents lived in Joplin, MO (just down the road from Springfield) and this has always been one of my favorite comfort foods. This is very different from the cashew chicken found in Asian restaurants in the rest of the country. It has been westernized almost to the point of not being Asian at all, but has become a regional favorite. This recipe has been adapted from a recipe found on Grouprecipes.com which is said to be the original recipe from Leong's Tea House in Springfield. I'm not sure if that's true, but it's pretty close to what I grew up with. Prep time includes the resting time for the chicken. The original recipe called for 9 tsp bouillon granules, but we thought it was a bit overpowering so we decreased it slightly. It's also possible to substitute the bouillon with 3 cups of reduced sodium chicken broth.
