Un classico panino mare e terra, dove agli scampi cotti al vapore - ma voi potete anche tranquillamente lessare in acqua - ho abbinato la zucchina romana grigliata ed un velo di maionese, rigorosamente fatta in casa, ma solo perché avevo tempo a disposizione, altrimenti avrei usato, senza troppi patemi d'animo, quella industriale. Per quanto riguarda gli scampi, che richiedono una cottura brevissima, per mantenerli morbidi, aggiungo solo che voi li potete sostituire con i gamberoni, a seconda di quello che trovate sul banco del pesce. Per la maionese, infine, vi darò dosi un po' abbondanti rispetto alla ricetta, in modo che ve ne avanzi un pochino, così che la possiate usare per altre preparazioni. Rispetto alla precedenti ricette, e soprattutto perché la voglia mi è venuta all'ultimo momento, il pane questa volta l'ho comprato, scegliendo una classica ciabatta, non troppo spessa e croccante. Ingredienti (per un panino) Per il panino Un panino (vedi dopo) Sei scampi Una zucchina romana Olio extravergine di oliva Sale e pepe Per la maionese Due tuorli d’uovo, freschissimi Olio extravergine di oliva Olio di oliva Mezzo limone Sale Per il panino, al solito, consiglio di prenderne uno con una bella mollica compatta e di sostanza e non quei panini eterei, che pesano pochi grammi. In alternativa, se avete tempo e voglia, potete fare voi il pane, seguendo la mia ricetta per il pane oppure la vostra. Si parte con la maionese, che io preparo con un metodo intermedio, tra l’approccio classico, amanuense con frusta, e quello sbrigativo, con il Minipimer. Uso quindi un robot da cucina, sul quale monto una piccola frusta che, non troppo velocemente e con movimento orbitale, mi consente di lavorare con una certa delicatezza. Per prima cosa, allora, mettete i tuorli d’uovo nella ciotola dove li lavorerete e tenete a portata di mano l’olio - o gli oli, se userete un mix - il succo di limone e il sale. Cominciate a lavorare le uova, aggiungendo l’olio a filo leggerissimo, ogni tanto interrompendo il flusso, in modo che le uova possano incorporarlo. Bilanciate sempre l’olio con un po’ di succo di limone, elemento fondamentale per stabilizzare la maionese. Non appena la maionese comincia a prendere consistenza, salatela secondo il vostro gusto e poi assaggiate per valutare l’equilibrio dei sapori, in particolare quelli di olio e limone, correggendo leggermente in caso di sbilanciamenti. Quando la maionese è pronta, travasatela in una ciotolina e tenetela al fresco, ma assolutamente non in frigorifero, dato che una temperatura così bassa farebbe condensare l’olio, soprattutto se avete usato solo l’extravergine, con il risultato di ritrovarvi con una maionese gelatinosa. Messa da parte la maionese, dedicatevi alla zucchina, lavandola, eliminando le parti iniziale e finale e poi, meglio se con una mandolina, tagliandola a fette nel senso della lunghezza, cercando di farle tutte dello stesso spessore, di circa un paio di millimetri. Prendete poi una bistecchiera o una padella anti-aderente (consiglio la bistecchiera solo per motivi estetici, dato che vi lascia sulle zucchine il classico disegno della griglia), metteteci un paio di cucchiai d'olio extra-vergine e portatela sul fuoco. Quando l'olio è caldo, unite le fette di zucchina, ben separate tra loro, e fatele cuocere su entrambi i lati, fino a quando non si saranno colorite al punto giuste. Salate e pepate solo quando il lato è stato grigliato (quindi, per capirci, mettete la zucchina; fatela cuocere da un lato; girate le fette; salate e pepate; fate cuocere l'altro lato; girate nuovamente e salate e pepate). Spegnete, togliete le zucchine e fatele riposare su un piatto, sul quale avrete messo qualche foglio di carta da cucina o per frittura, in modo da assorbire l'olio in eccesso. Dedicatevi infine agli scampi, che pulirete rimuovendo la testa, il guscio, la coda e il filamento intestinale, provando ad estrarlo delicatamente o, se si dovesse rompere, facendo una piccola incisione sul dorso dei crostacei e togliendolo usando la punta di un coltellino. Se avete l'elettrodomestico per la cottura a vapore, usatelo, facendo cuocere gli scampi, leggermente salati, per non più di un paio di minuti, in modo che rimangano ben morbidi e non diventino gommosi. Altrimenti, se volete procedere con la lessatura tradizionale, portate a bollore, in un pentolino, dell'acqua leggermente salata e, quando bolle, tuffateci gli scampi e fateli cuocere, come nel caso della cottura a vapore, non più di un paio di minuti. Tagliate in due il panino e, se preferite, scaldate leggermente le due metà nel tostapane o nel forno, poi distribuite un velo di maionese sulla mollica di ciascuna delle due metà, quindi distribuite le fette di zucchina grigliata e, per finire, gli scampi. Chiudete il panino con la metà superiore e addentate con cupidigia. Buon appetito. Abbinamento consigliato dall’Enoteca Colordivino: a questo bel panino abbinerei un bianco secco, non aromatico ma elegante che accompagni senza coprire la delicatezza degli scampi al vapore, come un Pinot Grigio dell'Alto Adige.
