Bereiden:Maak het deeg:Rooster de sesamzaadjes en anijs kort in een pan. Maak de boter en margarine zacht met het sesamzaad en de anijs. Voeg de dooiers toe en meng goed. Meng nu de rest van de ingrediënten onder het deeg en kneed tot een stevig, homogeen geheel. Pak het deeg in in plasticfolie en laat het een uur opstijven in de frigo. Vorm gelijke bolletjes van het deeg, 40 gram per bolletje. Rol deze gelijkmatig uit tot een worstje dat de dikte van een vinger heeft. Leg ze per 3 worstjes naast elkaar op een met bakpapier beklede bakplaat. Bak ze 15 à 20 minuten op 180°C in de oven. Maak de fruitinfusie:Was al het fruit goed zodat er geen vuil meer aan de schil hangt. Snijd het fruit in dikke stukken en voeg ze toe aan het water. Breng het geheel samen met de kaneelstokken en kruidnagel aan de kook. Wanneer de infusie kookt verlaag je het vuur naar middelmatig tot laag. Laat het geheel nog 20 minuten verder sudderen. Zeef de infusie zodat er geen brokjes fruit meer in zitten. Maak de honing: Giet de fruit infusie in een grote kookpot en voeg alle andere ingrediënten toe. Laat het geheel koken tot 125°C. Laat de honing een beetje afkoelen. Maak de dessert:Leg een verticaal laagje koeken in een rechthoekige springvorm, bekleed met bakpapier. Verspreid hierover wat honing. Leg hierop een horizontale laag van de koeken, gevolgd door nog een laagje honing. Hierop komt nog een derde laag verticale koekjes en tot slot nog een laatste laagje van de honing. Werk vervolgens de taart af. Strooi al het snoep of de strooisels over de bovenste laag honing. Verdeel de taart in gelijke stukjes alvorens te serveren.

J’ai cherché une vraie recette de touron d’Alicante partout, sur internet, dans les livres de cuisine espagnole, dans les livres de confiseurs professionnels, mais sans succès. Les recettes s’approchaient à peine du vrai résultat! J’ai dû avancer à l’aveugle et arranger à maintes reprises la recette pour arriver au résultat qui enfin atteint mes espérances! J’ai raté un certains nombres de fois, expérimenté plusieurs techniques, jeté des kilos de miel, sucre et amandes, me suis énervé, et surtout je me suis juré d’y arriver! C’est donc avec une grande fierté que je vous la présente enfin. Je tiens à préciser que cette recette s’adressera sans doute à ceux qui aiment les défis culinaires et qu’il faut un tout petit peu de patience pour y parvenir.

Dieser pinke Nougat ist viel einfacher herzustellen als man vielleicht glauben mag, etwas ganz Außergewöhnliches im Geschmack.Wie eine feste Marshmallow Creme die gespickt ist mit allerlei Nüssen und getrockneten Früchten. Unwiderstehlich auf dem Sweet Table oder hübsch verpackt als kleines Präsent. Etwas ganz Besonderes halt... Zutaten: 2 DIN 4 Bögen Esspapier 330g Zucker + 20g Zucker vermischt mit 1/2TL Cream of Tatar oder Weinstein 60g frisches Eiweiß 100g Glucose Sirup (oder weißer Maissirup, oder heller Grafschafter Sirup) 75g Wasser 1/2 TL Vanillepaste 100g heller Honig 75g weiße Schokolade geschmolzen 250g gemischte Nüsse und getrocknete Beeren (ich habe hier den günstigen Nuss-Frucht-Mix von Alesto, Lidl genommen ) etwas rosa Lebensmittelpaste Zubereitung: Die Nüsse und Beerenmischung in einer kleinen Auflaufform bei 80 Grad im Backofen anwärmen lassen, so verteilen sie sich später besser in der Eiweißmasse. Eine entsprechend große Form mit Backpapier auslegen und 1 Blatt des Esspapiers darauflegen. einen zweiten Bogen Backpapier und Esspapier bereit halten. Das Eiweiß, und die Vanillepaste in die Schüssel der Rührmaschine geben und die 20g Zucker gemischt mit Cream of Tatar (oder dem Weinsteinpulver) daneben stellen. In einem enstprechend großen Topf oder Steilkasserolle den Zucker, Sirup, Honig und Wasser verrühren und erhitzen. Wenn die Mischung 130 Grad im Topf erreicht, das Eiweiß in der Maschine anschlagen lassen, wenn es hell schaumig ist, die mit dem Cream of Tatar gemischten 20g Zucker dazugeben und weiterschlagen lassen. Wenn die Mischung im Topf 149 Grad erreicht hat, gießt ihr die aufgekochte Flüssigkeit ganz langsam in die schlagende Eiweißmasse in die laufende Maschine. Aufpassen das nichts spritzt. Lasst das Ganze ca. 3 Minuten schlagen und gebt etwas Farbpaste dazu. Nach drei Minuten die Schüssel aus der Maschine lösen und die 75g aufgelöste weiße Schokolade dazugeben. Gut unterrühren, dann die angewärmte Nuss-Beeren Mischung ebenfalls unter die Masse heben. Auf dem Esspapier verteilen und mit dem zweiten Bogen Esspapier belegen. Ein größeres Stück Backpapier darüber legen und mit einer Teigrolle die Masse gleichmäßig ausrollen. Komplett auskühlen lassen und dann in Stücke schneiden. Eine ganz besondere Leckerei, ideal fürs Sweet Table oder als kleines Mitbringsel hübsch verpackt ein echter Hingucker.
