We’re guessing a movie fan saved this menu from the Warner Bros commissary in 1963, circling the date in red pen and writing notes on the back. The person scribbled down the names of the stars in the canteen including actor Efrem Zimbalist jnr, crooner Bing Crosby and the hypnotically beautiful actress Ursula Andress who starred in the first James Bond film Dr No. Also noted on the back were the sets of My Fair Lady starring Audrey Hepburn and Rex Harrison and directed by George Cuckor. It won eight Academy Awards including Best Picture. There were also the sets of the Oscar-winning Music Man, Robin and the 7 Hoods and Cheyenne West as well as two television series 77 Sunset Strip and Temple Houston. As usual, Warner Bros employees had a generous menu to choose from. We liked the Secretary’s Light Lunch – a throwback to a different era that would elicit howls of protest today. The Indus was among the fleet of the Messageries Maritime, a French merchant shipping company that transported passengers and delivered packages and mail to people living in far-flung places. Launched in 1896, this was the menu for the steamship’s first-class passengers who travelled on its Far East route – mainly to Hong Kong and China. There was also room for second and third-class passengers and for the unfortunate people who had to sail in steerage, down below in the bowels of the ship. This 1896 menu image of a tiger presenting a pot of cooked food was created by the French illustrator and watercolor artist Auguste Vimar. Born in Marseille, France, in 1851, he became an illustrator for children’s books and contributed many of his wonderful animal images to Le Figaro Illustré. The little chimpanzee waiter below the tiger was also Vimar’s contribution to the fashion at that time for fantastical art images – later he replaced the Chimp with a monkey. This style of artwork became known as magical realism. This was a hearty dinner menu which included lamb chops, fillet of beef, chicken and fish. Other menus in this series feature a fox, a lion, an ostrich and a rhinoceros as waiters. Courtesy Private Collection. Henry Voigt, a member of New York City’s Grolier Club, curated A Century of Dining Out from his personal collection of over 10,000 historical menus.
The Hotel Cleveland, built in 1917, offered private baths, grand public rooms, and luncheon in its dining room. The menu was a prime example of traditional dining choices of the day. The selections were plentiful and could please any palette. The prix fix luncheon special for 85 cents was a deal! Shortly after this menu was put in place, the hotel’s kitchen was helmed by 24 year old chef Hector Boiardi. He served wildly popular spaghetti dinners and later changed his name to Chef Boyardee. The rest is history. He mass produced tomato sauce for millions of Americans who were ready to prepare an authentic Italian meal at home. The New York Public Library has a breathtakingly vast digital archive. You can browse botanicals, photographs, historic apartment floorplans, and (our favorite) old menus. It’s addictive! And here’s the best part: You can order prints, framed or unframed, or print them out yourself for free. We can so see a row of these whimsical menus in a kitchen. Most of the menus are from hotels and cruise lines and date back to the early-to-mid 1900s.
