Une fois de plus j'ai succombé à une recette de Yotam Ottolenghi. Je n'arrive pas à résister à toutes les recettes que je vois partagées par les uns et les autres. Cette fois-ci c'est grâce à Chic Chic Chocolat que nous avons eu un goûter vraiment parfait. Il a toujours de bonnes idées gourmandes, avec des associations parfaites et un équilibre à ne pas toucher. Les gâteaux au chocolat ne manquent pas sur le blog mais celui-ci n'y figurait pas. On a apprécié la petite touche de fleur de sel qui se ressent bien et la ganache qui recouvre le gâteau. J'espère réussir à vous convaincre de l'essayer, de faire une infidélité à celui que vous avez l'habitude de confectionner par réflexe. Vous ne le regretterez pas ! En plus, dans cette recette j'ai testé la nouveauté St Hubert, un beurre spécial Pâtisserie. Une recette 100 % végétale, sans huile de palme et avec un taux de matières grasses optimisé pour les pâtisseries. Sa texture fondante facile à incorporer en fait l’allié des pâtissiers. Ingrédients pour un moule de 24 cm de diamètre : . Pour le gâteau - 250 g de beurre - 200 g de chocolat à 70 % - 2 dosettes de café en poudre - 350 g d'eau bouillante - 200 g de sucre en poudre - 2 œufs - 240 g de farine - 1 cuillère à café de levure chimique - 30 g de cacao amer en poudre - 1 pincée de fleur de sel . Pour la ganache - 200 g de chocolat à 70 % - 200 ml de crème - 1 cuillère à soupe de golden syrup (à défaut de sirop de datte) - 25 g de beurre Préparation : Préchauffez le four à 170° C. Faites dissoudre le café avec l'eau bouillante. Versez sur le chocolat et le beurre en morceaux. Mélangez bien pour avoir un mélange lisse. Ajoutez les œufs et le sucre. Fouettez. Tamisez la farine, la levure et le cacao sur le mélange. Ajoutez la fleur de sel. Mélangez sans insister. Versez la pâte dans un moule en silicone de 24 cm. Faites cuire pendant environ 50 minutes. Vérifiez la cuisson avec une pique, et éventuellement prolonger un peu. Laissez tiédir avant de démouler, puis laissez refroidir. Une fois le gâteau refroidi, préparez la ganache. Faites chauffer la crème et le golden syrup (ou sirop de datte). Versez sur le chocolat haché et laissez reposer une petite minute. Mélangez vivement. Ajoutez le beurre en morceaux puis mélangez. Laissez refroidir à température ambiante. Recouvrez le gâteau de ganache. La quantité paraît importante, mais elle est très bien proportionnée avec le gâteau. Ce gâteau se conserve sans problème pendant 2 à 3 jours à température ambiante. IMPRIMER LA RECETTE
