30min · 2 servings For the peach bourbon glaze: 4 T butter • 1 jar peach preserves • 2 T Bourbon A pinch of @wildforkfoods spicy mojo seasoning -melt butter in a skillet over medium high heat (I did 400 degrees if you can fine tune it) • -add remaining ingredients and bring to a simmer, stirring as needed -once the sauce has homogenized, set aside until ready to use For the chicken: -season chicken thighs with the same spicy mojo seasoning used in the sauce • -place the thighs skin-side down on a griddle over high heat (I did 500 degrees) for 5 minutes, then flip • -once the chicken registers 150 degrees, toss in the peach bourbon sauce and continue cooking until it registers a minimum of 165 degrees • -serve & enjoy!
