Traditionally, most cheeses are made with rennet, an enzyme from the stomach of a calf. Not everyone's comfortable with that, so a number of ways exist to make cheese without rennet. These include various rennet substitutes, as well as fresh cheeses that curdle the milk with acidity instead.
