8-10 rice paper sheets • - 3 potatoes • - 300 firm tofu • - 1 onion • - 3 garlic cloves • - Salt, pepper, paprika, turmeric & sugar to taste • - Chopped cilantro (optional) - water • - 2 tbsp dates syrup / maple syrup INSTRUCTIONS: • Peel, dice and cook potatoes in boiling water until fork tender. • Meanwhile chop onion and garlic. Crumble tofu into a pan with oil over medium high heat and fry for a couple of minutes until golden. Add the onion and garlic and keep frying until the onion is translucent. Add cooked potatoes and spices and cook for 2 more minutes. Mix in chopped cilantro. Mix water with dates/maple syrup, dip one sheet of rice paper in the mixture, place on a wooden board and fold in the edges. • Quickly add a tbsp or two of filling to the bottom of the sheet
