These cupcakes might be the best one’s i’ve made so far, they are soft & crunchy - best of both worlds! (Recipe below) For 12 cupcakes you’ll need: Round baklava tops: • Around 150 g filo pastry (7-8 sheets) 100 g melted butter Layer a filo pastry sheet on a oven tray and brush it with butter, add another sheet on top and brush again. Repeat 6-8 times with butter inbetween the layers until you have around 8 layers of filosheets with butter. Use a round cookie cutter or a cup to cut circles and bake it in the oven at 200 °C (fan oven) for around 15-20 minutes or until golden brown on top).
