But, for an extra special treat, take the time out and cut your own homemade chips - you won't regret it. A Simple List of Ingredients: 1. Potatoes 2. Cornflour 3. Vegetable Oil 4. Onion 5. Garlic 6. Ginger 7. Green Chilli 8. Malt Vinegar 9. Dark Soy Sauce 10. Hot Chilli Sauce 11. Tomato Ketchup 12. Sugar 13. Salt 14. Red Chilli Powder 15. Fresh Green Coriander Bismillah, let us begin! To start, take 4 potatoes. Peel and cut into chips. Add two tablespoons of cornflour. Stir to coat all the chips in the cornflour. Fry the chips in a pan of oil until golden brown. Once cooked, drain on paper towels. For the sauce, take one sliced onion. And 2 teaspoons of crushed ginger. And, 2 teaspoons of crushed garlic. And, 2 sliced green chillies. In a pan, heat a little oil, and soften the onion, ginger, garlic and chilli. Next, add 2 teaspoons of malt vinegar. And, 1 tablespoon of dark soy sauce. And, 2 tablespoons of hot chilli sauce. And, two tablespoons of tomato ketchup. Stir to combine, and then add 1/2 teaspoon each of sugar and salt. To thicken the sauce, add 2 tablespoons of cornflour. Next, toss the chips in the sauce until they are well covered. Next, add 2 teaspoons of red chilli powder. You can add more or less, if you want. And finally, add two tablespoons of chopped fresh green coriander. Serve whilst hot. But if there’s one savory meal we can share as a country, it’s Khichadi, a rice porridge. Affluent or not, Khichadi is something we all eat and enjoy! The ingredients vary state to the state, but the foundation is the same. Traditional Khichadi is made with rice, a lentil, salt, turmeric, and a fat.This version of Masala Khichadi (an upgraded traditional Khichadi) is from the western state of Gujarat. There are many ways to enjoy and eat Khichadi, but for this specific style, I recommend eating with plain yogurt and papad.

Ingredients: (Serves 2) 200gms Bhendi (Okra/Ladyfinger) 1 cup Besan (Gram Flour) 2 tbsp Goda Masala or Coriander-Cumin seed powder or Garam Masala use either. 1 tbsp Red chilly powder 2 tsp Cumin powder 2 tbsp Amchur powder (Dry Mango Powder) 1 tsp Sesame seeds (Til) Salt to taste 2 tbsp Danyacha kut (Roasted peanut powder) Optional Oil for frying Method: Wash and pat dry bhendi. Cut the edges and make a slit in between. In a bowl add all the rest of ingredients except oil and mix well. Check for seasoning. Now fill this tangy besan mixture into the slit bhendi. In a pan/tava add oil and place the stuffed bhendi. Drizzle extra oil over the bhendi if required. Shallow fry the bhendi till masala and bhendi cooks well. Serve as it is or as a side dish.
