One day we woke up to a buzz, a Basque Cheesecake! I'm sure you too saw it in the middle of last year everywhere. It came up in almost every recipe site, sometimes with slight changes but in the end it's the same recipe. Rich cream cheese (lots of it), heavy cream, eggs, sugar and
The recipe is interesting, the creme patissier filling is very thick and floury, in fact it has more flour than I've used in the custard so I added more milk. This results in more custard being made than was needed and contributed to the overflow. The tart crust is also very wet so it needs to be rolled between two pieces of parchment and rested for a while so that it firms up. Once cooked, it tastes similar to a rich almond biscuit and is quite rich with the amount of butter and eggy, creamy custard inside. It's a cake best served in smaller slices (and you know me, I sliced it up big) and also benefits from being refrigerated for a few hours after it is baked so that the custard firms up a little.

This Basque cheesecake is a luscious creamy treat made with only a few ingredients. Heavy cream, Philadelphia brand cream cheese, and eggs form the rich custardy base. The equal proportions of vermouth and cider make this cocktail especially easy to pour or batch up. Choose a cider with a bit of tartness and funk, and reach for a quality red vermouth. Sweet and slightly viscous, it stands up to and smooths out the cider’s personality. Finally, don’t skimp on the garnish. The orange, olives and peppers should be deployed in a way that feels less like decoration and more like a snack. Drop the skewer straight into your cocktail to impart notes of citrus and brine — or lay it on top to snack on and sip at your leisure.
