There are as many versions of this classic of French patisserie as there are cheeses! For this version, Prue has added calvados to the frangipane and put the filling in a pâte brisée shell, for its crumbly, buttery texture.
If there’s one thing we deserve after a freezing-cold walk, it’s a sweet hit with a hot mug of tea or, even better, hot chocolate. These biscuit bars are just the thing –crisp shortbread biscuit topped with shiny set caramel and coated in smooth milk chocolate. Add a few sprinkles of sea salt over the caramel for a salted caramel version, if you like.

This iteration of a 17th-century French pithivier (from the town of the same name) comprises dauphinoise encased in two discs of cheat’s rough puff. The creamy cooking liquid is reinvented as a rich roquefort sauce.
The leafy, floral raspberries and intensely perfumed jam are the stars of these elegant traybake slices. Raspberries, like strawberries, have hints of milk in them, making them a perfect pairing for cream. You could try stirring a little chopped fresh basil into the cream, if you like, to up the ante and add a spicy freshness.

The crêpes in this beautiful, celebration centrepiece are made using matcha powder – finely ground green tea leaves that give a gorgeous, vivid colour. In Prue’s recipe, they are layered with creamy, white chocolate and strawberry filling.

These dainty treats are filled with homemade orange curd. You’ll make more curd than you need, so keep the remainder to have on toast another time.
These pillowy balls of dough are filled with homemade raspberry jam. One of the trickiest things about making doughnuts is the frying time – the sugar in the enriched dough means that they brown very quickly, in turn making it tempting to remove them from the oil before they are cooked in the middle. With that in mind, make sure you fry the doughnuts for at least 2 minutes on each side.
