De verdad que me encanta la granjería criolla, y lo demuestra las últimas publicaciones que he hecho ... hoy les traigo una de las que más recuerdos me trae, sobre todo de cuando viajaba de niña hacia el sur de Venezuela, en especial cuando visitabamos Upata, un pueblito ubicado en el Estado Bolívar que vio nacer a mi papá ... a orilla de carretera encontrábamos todas esas ventas de dulces criollos, las catalinas, cucas o paledonias como las llaman allá, las empanadas rellenas de dulce de plátano o de guayaba, entre otros dulces que acompañábamos con un gran trozo de queso guayanés. Esta receta de Catalinas, la tomé de mi Libro rojo de Don Armando Scannone, cuando hice la receta por primera vez le agregue la 1/2 cucharada de aceite y las 4 cucharadas de leche que señalaba en la nota final de ingredientes para que quedaran más suaves, quedaron ricas pero me gustó más la versión sin leche ... Catalinas, cucas o paledonias Rinde: 18 unidades pequeñas Utensilios: Cortapasta en forma de flor o redonda Bandeja para hornear Ingredientes: 1/2 taza de agua 1/4 kg de papepelón en trocitos 6 clavos dulces 6 granos de guayabita (Opcional, esto lo puse yo porque me encanta su sabor, pero no lo contempla la receta) 2 tazas de harina de trigo 1 cucharadita de jengibre fresco, rallado 1/2 cucharadita de canela molida 1/4 de cucharadita de clavo de especia molido 4 cucharadas de mantequilla con sal 1/4 de cucharadita de bicarbonato de sodio 1/2 cucharada de aceite Nota: Si las Catalinas se quieren de pasta suave y blanda, habría que agregar 1/2 cucharada de aceite y 4 cucharadas de leche a los ingredientes citados anteriormente. Procedimiento: 1.- Con anticipación para que esté completamente frío cuando se vaya a usar, se prepara un mela'o de papelón poniendo en una olla grande, para que no se derrame al hervir, el agua, el papelón y los clavos (en mi caso también puse la guayabita o pimienta de cayena). Se lleva a un hervor y se cocina por 1 a 2 minutos, sólo hasta disolverse completamente el papelón. Se obtiene 1 taza de mela'o. 2.- Se cuela inmediatamente para eliminar los clavos, pimienta guayabita y las impurezas. Se reserva hasta que enfríe completamente. 3.- Se precalienta el horno a 300 °F (150 °C). En un envase se pone 1 taza menos 2 cucharadas de mela'o, se le agregan la harina, el jengibre, la canela, el clavo molido, la mantequilla y el bicarbonato; todo se mezcla muy bien con un mezclador de pasta y la punta de los dedos, sin amasar demasiado. 4.- Con la 1/2 cucharada de aceite, se engrasa una bandeja de metal, para hornear, de unos 30 x 20 cm. (También pueden usar los silpack para hornear) 5.- Con las manos se hacen bolitas de unos 3 a 4 centímetros de diámetro, se colocan sobre la bandeja y con un tenedor enharinado o con los dedos enharinados, se aplastan hasta tener forma circular y un espesor uniforme de 1/2 centímetro. 6.- En mi caso, yo usé una cuchara para helados y un molde en forma de flor que coloqué directamente en la bandeja de horno ya engrasada y con los dedos enharinados, aplasté cada catalina para emparejar dentro del cortador y darle el espesor indicado en el punto anterior. 7.- Deben quedar bastante separadas, unos 3 centímetros, pues se extiénden al hornearlas. 8.- Se mete la bandeja en el cuarto tramo del horno de abajo hacia arriba, a unos 22 cm del fondo y se hornean por 30 minutos o hasta dorar. 9.- Se saca la bandeja del horno e inmediatamente se despegan las catalinas de la bandeja con una espátula de metal. 10.- Terminar de enfriar sobre una rejilla.
