Bitterballen itu bola-bola ragout yang dibalut tepung panir dan digoreng hingga garing. Resep bitterballen sebenarnya sama dengan resep kroket. Bitterballen ini cemilan khas orang Belanda. Biasanya disajikan di acara minum cocktail, pesta ulang tahun atau jajanan untuk nonton TV. Resep LoFoodie ini saya dapat dam adaptasi dari perhimpunan catering Belanda. Rasanya seperti bitterballen di snackbar & cafe. Cara membuatnya ngga susah, hanya harus sabar membuat kaldu untuk basis saus roux & ragoutnya. Bahan 300 gram daging sapi sedikit lemak 2 liter air 1 bawang bombay 1 prei 1 wortel 2 helai bay leaf 150 gram terigu 100 gram butter (bukan margarine) garam, pala bubuk & merica secukupnya 3 telur 250 gram tepung panir sedikit terigu minyak goreng secukupnya Cara membuat 1. Masak daging sapi bawang bombay, prei, wortel dalam 2 liter air diatas api kecil dengan selama 2 - 3 jam. Sekali-sekali angkat busa supaya kaldunya tetap jernih. 2. Angkat daging dan suwir-suwir. 3. Sisakan 800 ml kaldu untuk ragout. 4. Cairkan butter hingga lumer. 5. Masukan terigu sedikit demi sedikit (ini adonan dasar saus roux). Aduk-aduk selama kurang lebih 2 menit. 6. Siapkan 800 kaldu, tuang sedikit demi sedikit kedalam saus roux, aduk pelan-pelan hingga saus mengental. 7. Tambahkan daging suwir kedalam saus. 8. Bumbui dengan garam, pala halus & merica sesuai selera. 9. Masak diatas api kecil hingga mendidih. 10. Dinginkan. Diamkan selama 3 jam. Lebih baik lagi simpan ragout di kulkas untuk diolah besok harinya. 11. Bentuk bola-bola kecil dari ragout dingin. 12. Lumuri dengan terigu, gulingkan di telur kocok dan gulingkan di tepung panir. Ulangi 2 kali. 13. Panaskan minyak, goreng Bitterballen hingga kuning kecoklatan. 14. Sajikan dengan Mustard atau Chilli Saus. Eet smakelijk!
In Holland we like to add fritessaus to our french fries. Fritessaus is a sort of mayonnaise. It is similar to mayonnaise, but with at most 25% fat, it is leaner and usually sweeter than mayonnaise. Mayonnaise in the Netherlands is required by the Warenwet (Wares law) of 1998 to contain at least 70% fat and at least 5% egg yolk before it may be called mayonnaise. My favorite fritessaus is from Gouda's Glory. Since I can not buy it here this is my attempt of Dutch Mayo/fritessaus.

Quick & Yummy Bamie Bamie is a great one pan recipe, that is perfect for camping and caravaning. It is rather similar to Nasi Goreng. It is suitable for stir frying or cooking in one pan. I love dishes like this when camping or when cooking in my caravan or RV. To the basic recipe you can add other vegetables, such as mushrooms, broccoli, leeks and bean sprouts, if you prefer. As with fried rice, you can use whatever you have to hand. It is certainly one where you can kiss the cook in gratefulness. So come on get ready to pucker up...you are going to love this one Bamie 1 Tablespoon Olive oil/sesame oil combined 300g premium mince 1 onions chopped 1 teaspoon ginger* 1 heaped teaspoons garlic* ½ capsicum – can use a tin if fresh is not available 100g diced bacon (cut off fat first!) ¼ cup dark soy sauce or to taste 2 carrots ¼ shredded cabbage 2 packets of 2-minute noodles (minus any seasoning) Instructions Sauté chopped onion, capsicum, ginger and garlic in the oil. Add mince and bacon. Cook well. Add soy sauce to taste. Add remaining vegetables approx 10-15 minutes before serving, depending upon how cooked you like your vegetables. Stir every few minutes. Add more soy sauce to taste Cook noodles separately in hot boiling water for 2 minutes. Drain and stir through met & vegetable mixture. Add more soy sauce if desired before serving. *For ease whilst travelling, I like to have the small jars on hand A little goes a long way. I find it to be quite a filling meal. This dish was passed to me by my husband’s sister in law and it has become a family meal favourite. Thanks Marion. I owe you many kisses! What is your favourite one pan recipe?
