- en sand efterårsbasker For ifl. undertegnede er både kanel og kardemomme en væsentlig og vigtig fætter i og til efterårets mange søde sager og kager. Det samme gælder i disse lækre boller, for kombinationen af chokolade og kardemomme skal man så absolut ikke undervurdere! Og well, disse snaskede, svampede og helt igennem bløde og lækre bomber blev kreeret igår, hvor jeg havde en HEL fridag, som KUN skulle bruges på hyggelige ting. Det gik helt automatisk, for da bimsen og jeg endelig besluttede os for at komme ud af fjerene, så stod det ned i lårfede stråler, og mørket var endnu ikke forsvundet! Vejret indbød derfor i allerhøjeste grad til indendørs hygge, og at der i kalendere også stod "Den store bagedag" hjalp jo kun endnu mere på det. Det varede derfor ikke længe før jeg stod i køkkenet iført morgenkåbe og baksede disse herligheder sammen. Og 1, 2, 3 - halvanden time senere var der dømt råhygge i sofaen med både tæpper, stearinlys, serier OG en (eller to) chokoladebolle(r) med kardemomme - lun og nybagt naturligvis! Orrrrrk det var godt - og derfor skal I selvfølgelig have opskriften! :) Opskrift til 16 store boller 50 g. gær 2 dl. lunken vand 1½ tsk. salt 3 spsk. sukker 2-3 tsk. kardemomme, stødt 100 g. blødt smør 4 dl. creme fraiche (18 %) 2 æg 200 g. mørk chokolade ca. 700 g. hvedemel Rør gæren ud i det lunkne vand og tilsæt salt, sukker og kardemomme. Bland det bløde smør i sammen med creme fraiche og de to æg. Ca. halvdelen af melet tilsættes og chokoladen hældes ned i den bløde og klistrede dej. Dernæst tilsættes resten af melet lidt efter lidt, og mere mel kan tilsættes, hvis dejen føles alt for klistret. OBS. Dejen skal være meget blød og lidt klæg, men skal dog kunne formes og arbejdes med i hånden efter hævning. Når dejen er æltet godt igennem stilles den til hævning under klæde i ca. 30-45 minutter. Herefter slåes dejen ud på et meldrysset bord, rulles ud til en lang pølse som efterfølgende skæres ud i 16 lige store stykker. Disse formes til boller og placeres tæt ved siden ad hinanden på en bageplade beklædt med bagepapir. Bollerne dækkes endnu en gang til med klæde og hæver endnu en gang - denne gang i ca. 20 minutter. Varm ovnen op på 200 grader, pensl bollerne med et sammenpisket æg og bag de lækre chokoladeboller ved 200 grader i ca. 20 minutter eller indtil de er godt gyldne og sprøde i toppen. Husk at afkøle bollerne helt på en bagerist efter bagning. Note: en helt uimodståelig og lækker bolle, som så absolut skal laves igen og igen og igen herhjemme. Kombinationen af chokolade og kardemomme er eminent, og er kommet for at blive. Bollen er klæg og svampet på den helt rigtige måde, men det er samtidig en tung basse, som fylder godt i mavsen. Den går godt i spænd med både nybrygget kaffe og varm kakao :) Og har du endnu ikke bagt til weekenden, så gør dig selv og dine kære den tjeneste og bag disse :)
