This literary dish plays a key role in E F Benson's delicious novel 'Mapp and Lucia', to which many have been introduced through a gloriously camp 1980's channel 4 series starring Geraldine McEwan, Prunella Scales and the late great Nigel Hawthorne. 'Mapp and Lucia' is a very English novel set in the town of Tilling (based on Rye in Sussex), the book documents the epic social war fought between established queen of Tilling society Elizabeth Mapp, and newcomer and arch rival Emmeline Lucas (known to all as Lucia). Lucia strives, with the assistance of her devoted companion Georgie Pillson, to topple Mapp from her throne and assume control of Tilling social life by means of plot, manoeuvre and intrigue. The details of Mapp and Lucia's various attacks and counter-offences become an integral part of daily life in Tilling, with gossip and speculation being exchanged over morning shopping (or Marketing) in the High Street. One of the most vicious bees in Mapp's seething bonnet relates to a recipe of Lucia's, famous in Tilling for its succulence and exquisite flavour; Lobster a la Riseholme (Riseholme being Lucia's previous home, which is thought to be based on the town of beautiful Cotswold village of Broadway in Worcestershire). Lucia is extremely secretive about the recipe, and even her cook did not know how to complete the recipe as Lucia always added the finishing touches by her own hand, and as a result the recipe became extremely coveted, particularly by Mapp. The recipe is instrumental in the lead up to a climactic scene in the novel where Elizabeth sneaks into Lucia's kitchen on a stormy Boxing Day, and copies the recipe from a book on the shelf, unfortunately Lucia returns and discovers Mapp. The storm outside has been so intense that the banks of the nearby river burst and Lucia's kitchen (located in the marshes outside Tilling) begins filling with flood water. Mapp and Lucia have only one means of escape, and are carried out to sea by the flood water on board an up-turned kitchen table. We are never given the recipe in the book, apart from its opening lines of "Take two hen lobsters" but we are told however that its sauce is pink in appearance. Some have suggested that the dish is vaguely based an Escoffier recipe for lobster with paprika. So I have created this recipe with these details in mind. I have called for the use of live lobster but I have made it with ready cooked lobster and it was still delicious. Serves 2 as a starter, double the quantities for 4 people. Apologies for the vague quantities but I'm something of an instinctive cook and the quantities vary each time I make it, so do taste the sauce and alter quantities if necessary.

"Tipo de corte de Legumes" Recebi lindas facas da nossa nova Parceira a OSAKA, são tão maravilhosas que me inspiraram a fazer este post, a algum tempo queria mostrar alguns tipos de cortes de legumes, mas minhas facas não estavam ajudando, agora estão super afiadas com o super AFIADOR que ganhei da OSAKA, logo falo melhor sobre ele em outra publicação.Os legumes podem ser cortadas em formatos diferentes, para atender às exigências estéticas de certas receitas. Então resolvi mostrar alguns destes cortes, os mais utilizados. É muito simples. Veja alguns tipos de cortes: Julienne (Juliana): tirinhas de 4 a 5 cm de comprimento por 2 a 3 mm de largura. Usada para sopas do mesmo nome com cebola, cenoura, nabo, repolho, aipo e batata. Pode ser utilizado também para decorar saladas. Brunoise: cubos de 2 a 3 mm quadrados. Para guarnição ou sopa de hortaliças. Você faz o corte através do corte Julienne. Palito: Bastõezinhos, corte comum muito utilizado para fazer batatas fritas. Jardineira: corte em cubo de 1 cm, usado para guarnições simples e mistas de vegetais compactos. Este corte é feito através do corte palito. Batonero ou Bâton (bastão): usado para batatas que se cortam em bastõezinhos de 5 a 6 cm de comprimento e 1 ½ a 2 cm de largura. Macedoine: Este é um cubo cortado, com 5 mm, que é maior do que o corte brunoise. Os vegetais usados são cenoura, cebola, nabo e aipo. Este corte é feito através do corte Batonero. Rondele ou Vichy :Corte arredondado, geralmente feito em cenouras. ou Chip (se for batata): usado para batatas grandes, cortadas em lâminas muito finas para frituras, servidas como aperitivos. Este corte também é usado em preparações mistas. Fermiere: Você corta em 4 o rondele. Para fazer corte como estes, com tanta delicadeza e precisão é fundamental que se tenha facas de boa qualidade, que nos permita trabalhar de forma segura, estas que estou usando são da Nova linha de facas (Lançamento para o final do mês) em Titanium da OSAKA, alem de ser super leves, de possuir um corte preciso, são lindas, olha as cores, estou cada dia mais apaixonada pelas minhas facas. Gente, para tudo! Se eu pudesse eu colocaria uma trilha sonora solene neste post para apresentar para vocês o melhor molho de macarrão que eu comi nos últimos tempos. É nessas horas que acho uma pena a internet não transmitir cheiro e sabor... senão vocês iriam saber exatamente o que eu estou falando. Vou falar a verdade para vocês: não aguento mais molho de tomate. Com essa história de não poder comer massas com molho branco, o molho de tomate acaba sendo o mais fácil, mas nem sempre o mais fácil é o mais gostoso e além disso me faz mal. Eu estava com vontade de comer um molho cremoso, mas que não precisasse de creme de leite (de soja) e que fosse muito, mas muito bom. E posso dizer que, finalmente, eu e o molho nos encontramos, rsrs. Me baseei em uma receita da net, acabei mudando algumas coisas e o resultado final foi excelente! =) Talharim ao Molho de Filé Mignon e Funghi Sem Lactose Fonte: Receita baseada e totalmente adaptada daqui. 2 xícaras de água quente 1 xícara de funghi seco 500 gramas de filé mignon cortado em tiras grosseiras Sal e pimenta do reino a gosto 1 cebola pequena 4 dentes de alho 2 colheres de azeite 2 colheres de sopa de amido de milho 1 colher de chá de tomilho em pó 300 gramas de talharim número 2 1. Coloque o funghi seco para hidratar nas 2 xícaras de água quente por 30 minutos. 2. Enquanto isso, tempere a carne com sal e pimenta do reino a gosto e reserve por uns 10 minutos. Pique a cebola em cubos pequenos e esmague os alhos, reserve. 3. Numa panela média, coloque as 2 colheres de azeite e adicione o filé mignon cortado em tiras e frite um pouco até mudar a coloração e ficar cozida, não precisa fritar demais. Tire da panela e reserve (deixe o caldinho da carne que vai sobrar no fundo da panela). 4. Na mesma panela, refogue o alho e a cebola. Enquanto isso, escorra o funghi (reserve a água), pique grosseiramente e junte ao alho e cebola, refogue por 3 minutinhos. Coloque a carne na panela novamente. 5. Acrescente as 2 xícaras de água do funghi e dissolva o amido de milho em um pouco desta água antes de colocar na panela. Coloque o tomilho e mexa bem. Deixe ferver e vá mexendo de vez em quando até engrossar. Acerte o sal se necessário. Enquanto o molho engrossa, coloque o macarrão para cozinhar. 6. Assim que o macarrão ficar pronto, escorra e coloque na panela junto com o molho. Mexa bem e sirva imediatamente. MA-RA-VI-LHO-SO! Ah, outra opção de massa que coloquei aqui no blog e que é boa demaaaais é o Linguine com Camarão ao molho de Queijos sem lactose, vale a pena! O próximo post será a receita com chocolate, ok?
