Regardless, this is a first class curry....The story behind this curry is that an english army officer became ravenously hungry while travelling in a train.. He followed his nose to the pantry car where a spicy mutton curry was simmering.... He was offered a taste, where he burnt his tongue because of the spices.. The helpful cook the heat with some coconut milk and served it up.. But i use less spices without coconut or coconut milk.... From that day on, this curry has been served on all first class compartments of indian trains..... It is an amazing meat curry, delicious, having distinctive flavours of its whole spices.... So I hope that you must try this recipe and let me know how it's turns out from you.... Preparation time : 10 mins Cooking time : 30 to 35 mins Recipe cuisine - Indian Recipe category : Sidedish or Main dish.... INGREDIENTS : Mutton / Lamb - 500 grams Coconut oil - 4 tbspn Onion - 1 (big chopped) Tomato - 3 (chopped) Green chilli - 5 (slit) Curd - 1 cup Ginger garlic paste - 2 tspn Coriander leaves - few (chopped) Salt - as needed SPICES POWDER : Kashmiri chilli powder - 2 tspn (if using normal chilli powder, use less) Coriander leaves - 2 tbspn Turmeric powder - 1 tspn Garam masala powder - 2 tbspn Cumin powder - 1/4 tspn TO TEMPER : Fennel seeds - 1 tspn Cinnamon sticks - 2 big Cardamom - 2 Cloves - 2 Dry chilli - 3 (broken) Curry leaves - few METHOD : Heat oil in a pressure cooker.. Add in tempering items given in the list "TO TEMPER" toss it for 1 mins... Add in chopped onions, toss along with the tempering items.. When it became transparent add in all spices powder given in the list " SPICES POWDER" and salt.. Mix well for 30 sec and add in chopped tomatoes and toss it evenly.. When it turn little mushy add in mutton pieces and curd.. and toss well with the masala.. Keep tossing till the masala coats the mutton pieces and the mutton gets little dark brown in colour.. Keep it low flame for 7 mins and add in chopped coriander leaves.. Now add in very little water, say around a cup.. Cover it and pressure cook for 4 whistle, simmer the pan for 15 mins.. Turn off the heat and let the steam go all by itself.. When the mutton is done, open it and simmer for another 10 mins till it became thick... Serve it with rice or anything you like... PICTORIAL : Take your ingredients In a cooker add oil and whole spices Now add in chilli and curry leaves Add in onion and toss well till transparent Now add in whole spice powder and salt Toss well and add in chopped tomatoes Keep it low flame When it mushy Add in mutton pieces Add in curd Mix well Kep it low flame Now the mutton coated well with the masala Add some chopped coriander leaves Toss well Add in little amount of water Give a mix Now whistle it for 4 When it's done, mix it and keep it low flame Till the oil floats on the top.. Transfer it into a serving bowl Wow done Enjoy..
