Fazendo uma pesquisa pelo blog, tenho a sensação que ainda ontem editava as imagens e escrevia aqui a receita destas azevias e no entanto já passou um ano. Assim, num piscar de olhos. Não sei se é de mim, mas sinto o tempo escapar-se-me por entre os dedos como se se tratasse de pó. Não vou estar aqui a perder-me por entre lamentos por falta de tempo, pois acredito que o tempo é o que fazemos dele. Mas são tantas as coisas que quero fazer, tantos os lugares que ainda quero conhecer, os livros que quero ler, tantos os abraços que quero dar e tantas as receitas que quero fazer, experimentar e partilhar que às tantas dou por mim a pensar que nunca terei tempo para fazer nem metade daquilo que gostaria. Não sei se é por ser Natal, mas esta altura do ano deixa-me sempre nostálgico, traz-me sempre um turbilhão de emoções que se embrulham umas nas outras e me remetem para um sem número de recordações menos boas. Mas devaneios à parte, é Natal, é tempo de paz e amor, de reunir a família e os amigos e mal posso esperar para estar com os meus irmãos, cunhados e sobrinhos, abraçá-los e matar as saudades que já são tantas. Porque isso sim é o mais importante, a nossa família e os nossos amigos, aqueles que nos querem bem e a quem desejamos o melhor do mundo. Não sei se esta será a última receita que publicarei aqui antes do dia de Natal, mas tinha que a partilhar convosco por ser perfeita para esta quadra. Há muito que a queria experimentar pois já a tinha visto em alguns blogs escandinavos de onde ela é bem tradicional e, quer pelo aspecto estético, quer pelos ingredientes, a receita despertou a minha curiosidade. Aliás, eu adoro a cozinha escandinava, ainda recentemente adquiri este livro lindo com receitas maravilhosas, que estou a adorar e do qual espero fazer algumas partilhas em breve. Quando a Susana em conjunto com a Lia, lançaram o tema para a 11ª edição do desafio Sweet World eu não hesitei em arregaçar as mangas e colocar literalmente as mãos na massa para fazer estes Saint Lucia Saffron Buns ou Lussekater. Com origem na Suécia, estes bolinhos de massa leveda são muito comuns naquele país por esta altura e assinalam o dia de Saint Lucia, o Santo Padroeiro da Luz que se celebra a 13 de Dezembro, altura em que são abertas as festividades de Natal em terras escandinavas. Apresentam-se na forma de "S" mas podem ter outros formatos e o seu sabor é suave e perfumado pelo cardamomo o que os torna especiais. A massa fica muito leve e fofa pelo que não resistam a comer um ainda morno, pois saberá ainda melhor. Não foi fácil escolher uma receita, pois existem várias e todas muito parecidas. Umas que levam queijo fresco outras que não levam ovo, umas com farinha integral, pelo que acabei por fazer uma conjugação de duas receitas, uma de um blog que adoro, o Green Kitchen Stories e outra do blog A Pinch of Happiness. O resultado foi tão bom que foi difícil não parar de comer estes buns maravilhosos e já estou a pensar repeti-los para o Natal. Saint Lucia Saffron Buns | Lussekatter Ingredientes: | 100 g de manteiga | 1 c. (chá) de açafrão das Índias em pó (usei Margão) (fio de açafrão, no original) | 150 ml de leite | 100 ml de natas | 15 g de fermento fresco | 300 g de farinha de espelta branca | 150 g de farinha de espelta integral | 100 g de açúcar amarelo | 1 pitada de sal | 1 c. (chá) de cardamomo (usei Margão) | 1 ovo | 1 gema para pincelar | 1 c. (sopa) de leite para pincelar | cerejas secas (usei passas de uva) Preparação: Levar um tacho ao lume com a manteiga, o açafrão, o leite e as natas e deixar amornar até que a manteiga derreta e o açafrão se dissolva (não deixar ferver). Deixe arrefecer até cerca de 30ºC e dilua o fermento na mistura de leite e manteiga. Peneire as farinhas para uma taça, junte o açúcar, o sal, o cardamomo e aos poucos vá adicionando a mistura de leite e o ovo ligeiramente batido. Misture bem até obter uma massa uniforme e pegajosa. Transfira a massa para uma superfície enfarinhada e amasse durante uns minutos até a massa ficar elástica (não caia na tentação de adicionar mais farinha ou a massa ficará pesada). Forme uma bola e coloque novamente a massa na taça, tape com um pano e deixe levedar durante cerca de 1h30m ou até que duplique de volume. Volte a colocar a massa numa superfície enfarinhada e forme um rolo. Corte em várias porções com aproximadamente o mesmo tamanho (no meu caso rendeu 16 pedaços). Estenda com as mãos cada pedaço de massa formado um rolo com aproximadamente 20cm de comprimento e depois enrole as pontas até que estas se encontrem no centro, formando um "S". Forre um tabuleiro de forno com papel vegetal e disponha nele os bolinhos, deixando algum espaço livre entre cada bolo, pois eles ainda irão crescer. Deixe novamente levedar por cerca de 30 minutos. Pré-aqueça o forno a 200ºC. Bata a gema com o leite e pincele cada bolinho com esta mistura. Em cada extremidade do "S" coloque uma cereja seca e pressione ligeiramente com os dedos. Leve ao forno cerca de 12-14 minutos ou até que comecem a ficar douradinhos na superfície. Deixe arrefecer sobre uma grelha.
