Hungarian Sun Pickles Kovászos Uborka first day outside! Mmmm pickles. I love pickles, be they in vinegar, brined, cucumber, okra, etc. My all time favorite, though, would have to be the Hungarian Sun Pickles. I have fond memories of eating them as a child, and they have quite a unique flavor. Every summer now I buy (or grow) pickling cucumbers, and make at least one batch of this delicious pickle. The funny thing is, when I last went to make them, I searched my blog to find the recipe, and realized that I haven't added it yet! So here it is. Hungarian Sun Pickles Yes, that is parsley, not dill. And a grape leaf. Please see notes. Ingredients 8 cups filtered or bottled water 1/2 cup of salt (kosher, sea, or canning is best) Dill (Fresh, dried, or just the seeds) 3 or more garlic cloves Rye Bread (really any bread will work, but Rye is traditional) Enough Pickle-sized cucumbers to fit your jars. optional- hot peppers Instructions Bring Water to a boil, remove from Heat and add salt. Prepare and Slice the cucumbers- chop off both ends, and then cut- traditional is quartered lengthwise without cutting all the way (so that they remain intact) but spears, chips, whatever works. Pack the jars- Dill, peppers (if using), garlic, and cucumbers. Pour the warm brine into the jar to cover the cucumbers. Tuck the bread into the jar and under the lid. The bread creates a barrier from the outside air, adds complex sugars for the ferment, and gives it a unique taste. Make sure to layer the bread to cover any opening. Use plastic wrap, a plastic baggie, or cheesecloth to cover the top, and secure with a rubber band. Pierce a few holes if using plastic wrap or plastic baggies. This is to let air escape, but keep the pests out. Set outside during the day for 1-4 days, depending on the heat, and let ferment. When fermentation is done, scoop out the bread, and store in the fridge. If you want to make sure and get all of the bread, dump the contents into a bowl, repack everything except the brine, and then pour the brine back into the jar through a sieve. The milky yeast is normal at the bottom of the jar. Enjoy! The finished product! Notes: This pickle turns soft quick. Although I made 4 jars in my pictures, I regretted doing so because I ended up having to use the last pickles for dips and soups. Just make one jar at a time, and enjoy within a week. Because I live in Italy, I cannot find Dill anywhere. I'll have to grow it myself for next year. So in this batch (in the pictures) I used parsley instead. Although not bad, it's no substitute for Dill. This last batch I also tried to use a grape leaf in the jar to help keep the pickles from going soft (I had read about the technique on the internets), but it didn't seem to help. I also used whatever bread I had in the pantry this time- which turned out to be a wheat and a hard white bread. Každý podzim opráším svůj maličký kvašáček a vyrobím nakládanou zeleninku. Pravda dá se dělat celoročně, ale ten podzim mi k tomu sedí tak nějak nejvíc a po zbytek roku kvašák odpočívá na nejhořejší polici a čeká kdy zase přijde jeho čas. A jak naši oblíbenou zeleninovou směs nakládám? Jednu menší hlávku zelí a tři bílé cibile nakrouhám na nudličky, tři velké mrkve a jedno větší jablíčko nastrouhám na hrubo, přiměřeně posolím, zamíchám a nechám asi hodinu odstát, aby zelenina v soli povadla a začala pouštět šťávu. Potom zeleninovou směs napěchuju do kvašáku, asi centimetr pod okraj, zatížím tak aby zelenina byla pod tekutinou a na teplém místě nechám probíhat mléčné kvašení. Asi po čtyřech dnech můžeme vyzkoušet jak zeleninka chutná. Kvašák vždycky raději postavte na talíř, nebo nějakou misku, pokud kvašení začne probíhat hodně bouřlivě, mohla by vám tekutina vytékat ven. Itt az ideje, hogy elkezdjük elrakosgatni a nyári savanyúságokat télire. Aki már egyszer megismerte a nyár ízeit idéző, házilag tartósított finomságokat, az tudja, hogy megéri az időt és a fáradtságot rááldozni az elkészítésére. Sokáig én is piacokon vásároltam a savanyúságot, de előbb-utóbb jött a kiábrándító tapasztalat. Vagy túl sós volt, vagy nagyon édes, vagy szinte ehetetlen volt a túlzott ecettől és kéntől. Mivel nagyon szeretjük a savanyúságokat és nehezebb, zsírosabb ételek mellé - amiket általában télen eszünk - ajánlatos is fogyasztani, elkezdtem elrakosgatni a magunk ízlése szerint. Ugyan vannak még hiányosságaim ezen a téren, de van néhány jól bevált receptem ismerősöktől, nagymamáktól, szomszédoktól. Ez is egy ilyen. Drága Mariannka kolléganőmtől kaptam, évek óta az ő receptje szerint teszem el a paprikát és mindig gyönyörű "hófehér" és ropogós marad. Ezúton is köszönöm neki! A mennyiség egy 5 literes üveghez van megadva, de én inkább kisebb adagokban rakom el, mert az nekünk 2-3 étkezéshez elegendő és felbontás után könnyebb a hűtőben is tárolni. Elkészítési idő: 30 perc Ecetes almapaprika Hozzávalók: (1db 5 literes vagy 6 db 720 ml-es üveghez) 2 kg almapaprika fűszerek: egész fekete bors mustármag koriandermag babérlevél felöntőlé: 2 liter víz 8 dkg só 4 dl 10%-os ecet 25-30 dkg cukor 1 kávéskanál borkénpor Elkészítése: Az almapaprikákat megmossuk, félbevágjuk. (így könnyebb betenni az üvegbe). Ha 5 literes üvegbe rakjuk, akkor egészben hagyjuk. A vízhez hozzáadjuk az ecetet, sót, cukrot és a borkénport. Nem forraljuk fel, csak sűrűn megkevergetve megvárjuk amíg a cukor és a só felolvad benne. Tisztára mosott, sterilizált üvegek aljára szórunk ízlés szerint a fűszerekből és rakunk bele 1-2 darab babérlevelet, minél szorosabban megpróbáljuk belerakosgatni a paprikákat, majd ráöntjük a felöntőlevet. Celofánnal befedjük, rácsavarjuk az üveg tetejét és a kamrapolcra állítjuk. Kb 3-4 hét múlva fogyasztható.

Ok, I know what you're thinking: "How could a hard-boiled egg, preserved in vinegar be appealing to the tastebuds? Are you insane, Vinnie?" Well, the first time I had a pickled egg was at a small bar in Redfern called Dryland (which has now unfortunately closed, but was a fantastic bar). I was really keen try pickled eggs because they always seem to make appearances in bar scenes in movies and TV shows; perched up on a shelf next to bottles of spirits at the bar. None of the characters ever seem to eat them, but I figured, they must be good or else the bartenders wouldn't keep making them available. And I've got to say, the pickled egg didn't disappoint! I think you have to like hard boiled eggs as a starting point, but then the saltiness and strong vinegar flavour makes them a really tasty snack. The flavour is along the same lines as salt and vinegar chips. They're really moreish. Before making the eggs, I did some research across the internet, and decided to concoct my own pickling recipe, featuring garlic and malt vinegar. It's a very simple process, and once you've got a jar of these in your fridge, you'll always have something to eat alongside a chilled pint of your favourite ale. Garlic and Malt Vinegar Pickled Eggs What you need: 12 large free-range eggs; 600ml bottle of malt vinegar; 6 cloves of garlic finely sliced; 1 tablespoon of chili flakes; 2 tablespoons of salt. The pickling: Fill a large pot with water. Bring the water to the boil, and then slide in your eggs. Cook them for about 6 or 7 minutes. You can use other methods to boil the eggs, as long as they are hard-boiled. Allow the eggs to cool and then peel all of the eggs. Next infuse your vinegar. Pour the bottle of malt vinegar into a pot. Next, add in your garlic and chili and salt. Simmer on a low heat for about 10 minutes. Sterilise a jar that will fit all of your eggs. Mine was about 750ml. You can do this by simmering the jar in a large pot of water for 10 minutes. Or you can heat them in an oven that has been preheated to 120 degrees Celsius for 20 minutes. Add the peeled eggs into the sterilised jar and then pour over your infused vinegar. Store in the fridge for at least a week before eating. Serve with beer or other beverage.

Sommerzeit ist Einmachzeit. Was für ein Sommer? Naja, ich hör ja schon auf zu meckern. Ich habe nicht mal ein Glas Marmelade gekocht, dafür hat meine Mutter letzte Woche 70 Gläser Pflaumenmarmelade gemacht - mit den leckeren gelben Pflaumen aus unserem Garten in den Abruzzen. Da wird ja wohl ein Gläschen für mich übrig sein.
