Today's recipe for Lincolnshire Sausage, Sage & Onion Pies is a cheat's recipe. and only uses 4 ingredients. Made with ready-rolled puff pastry, butcher's sausages, a packet of stuffing mixture and an egg, these pies taste fabulous. Lincolnshire Sausage, Sage & Onion Pies are certainly not "haute cuisine", but they make a fabulous family meal. I used local butcher's Lincolnshire sausages, with a minimum meat content of 85%, and they were also gluten free. So, you can make these gluten free, as Jus-Rol and Paxo stuffing both offer gluten free pastry and stuffing mix. The idea for this recipe came from me wanting to empty the fridge, pantry and small freezer before going away. I had two packs of puff pastry in the freezer, left over from Christmas, and a pack of sausages in the fridge. There was an egg lingering in the egg basket, and a small packet of Paxo stuffing, again left over from Christmas. I made 6 generous pies with all of the ingredients, two to enjoy now and four to take to my daughter's house. We enjoyed ours simply served with mashed potatoes and a tin of marrowfat peas, again, another store-cupboard favourite. I hope you enjoy this unashamedly simple recipe as much as we do. I cannot indulge in conversation while I am engaged in the creation of a veal pie." —The Little White Horse by Elizabeth Goudge, Chapter 5 In Elizabeth Goudge's gilded fantasy novel The Little White Horse, 1st published in 1946 London and a great inspiration to many authors such as J. K. Rowling, the main character Maria encounters many delectable delights from the culinary master Marmaduke. Like, a scrumptious ton. I want to have it all. I chose Marmaduke's veal and ham pie though because the scene in which Maria watches him make it, is the scene in which she first meets him. He wielded his rolling-pin like a king's sceptre, and so light was his pastry that it looked more like sea foam than dough as he flicked it over on his board. Beside him stood a great dish of succulent chunks of veal and ham, hard-boiled eggs, parsley and chopped onion. Maria's mouth watered as she looked at it, and when he swung the great oval of white pastry over it she had to swallow hard. Then he started to make the decorations for the top of it, his skillful fingers pinching out flowers and leaves from the dough with an artistry that any sculptor might have envied. —Little White Horse by Elizabeth Goudge, Chapter 5 For my review of The Little White Horse click here. Note: It would seem that Marmaduke made an oval pie, and you can too, but in all honesty, because this type of pie is typically cut like a loaf of bread, a rectangle shape is more equitable for even slices. Marmaduke Scarlet's Veal & Ham Pie Ingredients: Filling 1 1/2 lbs. Veal, minced, ground, or chunked 2 Cups Ham, minced or chunked 1/2 Large Onion, finely diced 1/3 Cup Fresh Parsley, finely chopped 2 tsps. Fresh Lemon Zest 5 Hardboiled Eggs, ends cut off Egg Wash 1 Egg 1 Tbsp. Milk Hot Water Pastry 3/4 Cup Water 1/2 Cup Butter 1/2 Cup Shortening (+ extra for the pan) 3 1/2 Cups Flour 1/4 tsp. Salt Stock Gelatin 1/2 Cup Veal Stock (or other flavor) 2 tsp. Unflavored Gelatin Powder/Granules 2 Tbsp. Cold Water Important Items: Loaf Pan (make sure it's deep enough for the eggs & meat) Parchment Paper Aluminum Foil Pastry Brush Flower & Leaf Cookie Cutters (optional) Funnel Directions: 1. In a medium bowl, thoroughly combine all of the filling ingredients by hand. Set aside. In a medium pot on high heat boil the 1st 3 pastry ingredients until the shortening & butter are melted. Remove form heat. In a heat-proof bowl whisk together the flour & salt. Pour in the heated shortening/butter liquid & stir until just combined & then knead by hands until fully combined (it'll be nice & warm). 2. Preheat your oven to 350°F. Grease your bread pan w/ shortening. Cut a piece of parchment paper to the width of the pan & long enough to hang a little over the sides & then place it into the pan (the shortening will hold it into place). 3. Roll out half of the warm dough into a long rectangle of about 1/4" thickness. Carefully place it into the paper-lined pan & press it up, & a little bit over, the sides. Next, scoop in about 1/3 of the meat filling & then line up the hardboiled eggs, end to end, down the center (on top) of the meat. Scoop in the rest of the meat mixture & gently press it around the sides & tops of the eggs, covering them completely. 4. Roll the rest of the dough into a 1/4" thick rectangle & then lay it on top of the filled pan. Cut off the excess & set it aside for decoration use. Nicely crimp & seal the top & sides together & then, using a small sharp knife, cut a nickel-sized hole out of the center of the top dough. With the dough remnants, roll & cut little flowers & leaves & lay (gently press) on top for decoration (suggestion: place dough petals around the hole in the top of the pie). 5. In a small bowl vigorously whisk together the egg wash ingredients until no blobs remain & then lightly brush it all over the dough. Place into the oven & bake for about 90 mins or until the top is a nice deep, golden brown, laying foil over the top about 1/2 way through (45 mins.). Remove from oven when done. 6. In a small-medium pot, bring the stock to a boil (or you can simply zap it in the microwave for about 3 mins in a glass measuring cup). In a small bowl mix the gelatin powder & cold water until you get a thick, jiggly blob. Stir into the hot stock until the gelatin is dissolved. Using a funnel (it's okay if you don't have one though), carefully pour this mixture into the pie via the hole until the liquid reaches the top & then tap the pan on the counter to help the liquid fill in any gaps & crevices there might be inside the pie. Pour in more liquid as needed. Let the pie sit on the counter for about an hour & then put it into the fridge to chill several hours or overnight. Remove the pie from the pan by carefully sliding a butter knife all around under the edges to make sure it's not stuck to the pan (shouldn't be though because you greased the pan in step 3) & then pulling up on the overhanging parchment paper to lift the pie out of the pan. Place on a serving platter or cutting board & cut into 1" or so wide slices (crust will be rather on the hard side so saw & persevere!). Serve chilled as is, or heat it up a little, though heating much will cause the gelatin to melt. Muitas vezes dou comigo a pensar como seria se não gostasse de cozinhar e de comer. A resposta é óbvia e surge logo de imediato. Certamente não seria uma pessoa tão feliz. É das poucas coisas que me dá imenso prazer, ter um paladar apurado e gostar de comer. Poder saborear cada ingrediente, sentir a sua textura e satisfazer o sentido do gosto. Lembro-me desde sempre de gostar de saborear os alimentos, sentir o doce e o salgado, a amargo ou o ácido. Tenho os meus ingredientes preferidos, aqueles que não dispenso, que fazem parte da minha alimentação diária, que estão sempre presentes na minha cozinha. Contam-se pelos dedos das mãos aqueles que eu não gosto. Sou daquelas pessoas que é capaz de fazer uns quantos quilómetros ou ir aos sítios mais estranhos em busca do ingrediente perfeito ou para adquirir um ingrediente raro. Coisas que só um verdadeiro foodie irá perceber. E gosto de estar sempre a experimentar coisas novas, receitas vindas de outras cozinhas, de outros países, outras culturas. e para isso existem os livros que se vão amontando nas estantes, as receitas que vão sendo marcadas e que aguardam em fila de espera até ao dia em que saem do papel para a minha cozinha. No entanto, sou muito ligado e jamais esqueço a nossa cozinha tradicional portuguesa. Foi com ela que eu nasci, os pratos típicos cozinhados pela minha mãe em forno de lenha e na panela de ferro. E esses sim, são aqueles pratos que eu realmente adoro devorar, pratos que arrancam de mim sorrisos de satisfação, a comida verdadeira e que conforta, com ingredientes genuínos e cheios de sabor. Chegamos a Março, o mês que traz com ele a minha estação do ano favorita. Não que desgoste das outras, todas elas têm o seu encanto, mas a Primavera é especial. Traz mais luz, traz o cantar dos pássaros assim que o sol mostra os seus primeiros raios matinais. As temperaturas são mais simpáticas e toda uma série de novas frutas e legumes começam a brotar da horta e aparecem nas bancas dos mercados. É sempre um prazer poder cozinhar com os legumes mais frescos e saborosos, aqueles que saltam praticamente da horta para o prato, que não requerem muitas técnicas ou transformações na cozinha. E sabe tão bem ter a Primavera no nosso prato. Surgem também os morangos para as sobremesas e que tornam mais deliciosos os lanches. Com o inicio do mês chega também mais um desafio do Dia Um... Na Cozinha! Para esta edição o tema são as empadas. É um tema feliz, pois adoro empadas e acho que até as podia comer todos os dias... ehehe. Já experimentei algumas receitas como esta ou as Empadas de Pato que ficaram para lá de boas. Aqui decidi abolir a carne e trazer uma sugestão com legumes, já com um cheirinho a Primavera. Conseguem imaginar uma caixinha de massa integral e estaladiça recheada de legumes bons e perfumados com Ras El Hanout?! É esta a minha sugestão com a qual me deliciei e que recomendo fazerem. Os legumes podem ser outros ao vosso critério, mas não dispensem a abóbora Butternut que funciona aqui como uma piece de resistance. Empada de Legumes Ingredientes: {para a massa} | 100 ml de água | 100 g de manteiga | 1 ovo | 1 pitada de sal | 100 g de farinha de trigo integral | 200 g de farinha de trigo s/ fermento {para o recheio} | 600 g de abóbora Butternut | 1 cenoura | azeite q.b. | sal q.b. | 1 c. (sopa) de Ras El Hanout | 1 alho francês | 2 cebolas roxas | 100 g de castanhas | 3 dentes de alho | 1 c. (sopa) de vinagre balsâmico | 300 g de cogumelos | pimenta q b. | 200 g de espinafres (usei congelados) | 1 requeijão | 50 g de nozes | 1 ovo para pincelar Preparação: Pré-aqueça o forno a 180ºC. Amorne a água num tacho, junte a manteiga e mexa até esta derreter, Adicione as farinhas, o sal e o ovo ligeiramente batido. Amasse bem até que todos os ingredientes fiquem bem ligados, a massa despegue dos dedos e consiga formar uma bola. Reserve. {Thermomix - Bimby} Coloque todos os ingredientes no copo e programe (10seg/vel6). Se achar necessário junte mais um pouco de farinha até a massa despegar das paredes do copo. Corte a abóbora e a cenoura em cubos de 1cm, disponha num pyrex, regue com 2 c. (sopa) de azeite e polvilhe com sal e com o Ras El Hanout e leve ao forno durante 30 minutos. Corte o alho francês em rodelas e saltei-e numa frigideira com 1 c. (sopa) de azeite, até ficar macio. Reserve. Na mesma frigideira, coloque mais 1 c. (sopa) de azeite, junte as cebolas e as castanhas grosseiramente picadas e também os dentes de alho picados. Tempere com sal e refogue durante 8 minutos até que a cebola fique macia. Junte 1 c. (sopa) de vinagre balsâmico e mexa até a cebola caramelizar. Reserve. Corte os cogumelos em quartos e coloque-os na mesma frigideira com 1c. (sopa) de azeite, tempere com sal e pimenta e salteie até que fiquem macios e todo o líquido tenha evaporado. Reserve. Ainda na mesma frigideira coloque 1 c. (sopa) de azeite, junte os espinafres e salteie. Tempere com sal, adicione o requeijão e as nozes grosseiramente picadas e mexa durante 2 minutos. Reserve. Divida a massa e três partes e reserve uma das partes. Forme uma bola com as outras duas partes e estenda a massa com o rolo numa superfície enfarinhada, o suficiente para forrar uma forma rectangular. Forre a forma tendo o cuidado de não cortar a massa excedente. Comece por colocar o alho francês no fundo da forma. Disponha de seguida a abóbora e com as costas de uma colher de sopa pressione ligeiramente. A seguir faça uma camada com a mistura de espinafres e requeijão e por cima desta camada forme uma outra com os cogumelos. Faça ligeiramente pressão sobre os legumes, usando uma colher. Termine com uma última camada de cebola roxa caramelizada. Estenda a restante massa, dando-lhe um tamanho suficiente para cobrir o topo da forma. Molhe ligeiramente a massa excedente no bordo da forma, em toda a volta (a água irá servir de "cola"). Coloque a massa por cima, cobrindo toda a forma e com os dedos pressione lifgeiramente, unindo as duas massas e selando a empada. Corte o excedente de massa e reserve as aparas. Com os dedos faça um efeito ondulado em toda a volta e com as sobras da massa faça pequenas "folhas" de massa. e decore a gosto, colando-as na superfície com água. Com uma faca faça um pequeno orifício no centro da empada. Isto fará com que o vapor saia durante a cozedura, evitando que a massa enfole. Leve ao forno durante 40 minutos ou até que a empada comece a ficar durada. Retire, desenforme a empada e pincele por cima e em toda a volta com o ovo batido. Leve novamente ao forno por mais 10 minutos.

Ce mois ci Catalina du très joli et super gourmand Blog de Cata nous propose pour le #catacookingchallenge04 d'aller faire un tour en Europe de l'Est ou de nous promener en Franche Comté et en Bourgogne pour les balades en France. J'ai donc eu envie de cuisiner une spécialité de Bourgogne que j'apprécie beaucoup , jusqu'à présent je l'achetai tout prêt , mais je me suis lancée et même si le temps de cuisson et de repos parait super long , le temps réel de préparation est vraiment rapide , j'en ai fait une toute petite terrine de 15 cm de long, la prochaine fois j'en ferai bien plus , vu comment tout le monde a apprécié cette recette chez moi . Pour 6 personnes vous aurez besoin de : - 1 jarret de porc demi sel - 1 morceau de palette demi sel - 1 oignon - 4 /5 clous de girofle - 3 feuilles de laurier sauce - 1 banche de thym - 10 cl de vin blanc sec (bourgogne aligoté ) - 4 feuilles de gélatine - poivre du moulin - 1 gros bouquet de persil plat Pour faire cuire la viande j'ai choisi d'utiliser mon modèle G de chez Ollas GM / GM Pot , si vous ne possédez pas ce robot fantastique utilisez un cuiseur sous pression , ou dans un pot de soupe , mais il faudra compter 2 h30/ 3 heures avec une cuisson sous pression et au moins 3 h 30 à 4 heures pour une cuisson dans un pot de soupe. Dans le bol du robot déposez le porc salé , l'oignon piqué de clous de girofle , le thym et le laurier , lancez le programme cuisson sous pression pour 99 minutes , puis à la fin du programme relancez pour 60 minutes de mieux. Laissez refroidir complètement. Triez la chair et ôtez les parties trop grasses et la couenne. Récupérez 10 cl de bouillon, poivrez le et faites bouillir à nouveau , ajoutez y la gélatine préalablement ramollie dans l'eau froide et essorée puis le vin blanc. Hachez finement le bouquet de persil. Dans la terrine alternez les morceaux de porc et le persil haché , tassez bien. Versez dessus le porc et le persil le bouillon gélifié , et entreposez au frais pour au moins 12 heures. Servez très frais avec de la salade, du bon pain de campagne et des cornichons pour une délicieuse entrée ou un repas léger. Régalez vous. ©2017 Keskonmangemaman?
