These delicious savoury Zucchini, Ricotta & Feta Fritters with Dill are absolutely addictive. Low fat and low cal, it seems impossible that anything so healthy could taste so great. Topped with a dollop of tzatziki, these fabulous fritters make an easy summertime hors d'oeuvre or side dish served with some grilled fish or chicken. Tweak the recipe with some smoked mozzarella or pecorino cheese instead of the feta or some chopped spinach, sweet corn or fresh cilantro for more savoury twists on this true Italian classic. Zucchini, Ricotta & Feta Fritters with Dill Makes about 20 2 medium zucchini, coarsely shredded 1/4 cup ricotta cheese 1/4 cup Greek yogurt 2 tbsp feta, crumbled 3 garlic cloves, minced 3 large scallions, very thinly sliced 1/4 cups fresh dill, chopped 2 large eggs 2 tsp finely grated lemon zest Kosher salt and freshly ground pepper Olive or vegetable oil, for frying 3/4 cup all-purpose flour Lemon wedges and tzatiki, for serving In a strainer, toss the shredded zucchini with the salt and let sit for ten minutes. Then thoroughly squeeze out as much moisture as you can. In a large bowl, combine the zucchini, ricotta, yogurt, feta, garlic, scallions, dill, eggs, lemon zest and 1 teaspoon each of salt and pepper. Stir well, then stir in the flour just until incorporated. Line a large baking sheet with paper towels. In a large skillet, heat 1/4 inch of oil until shimmering. Working in batches, add 2-tablespoon mounds of the zucchini batter to the hot oil, spreading them to form 3-inch fritters. Fry over moderately high heat, turning once, until browned and crisp, about 3 minutes. Drain the fritters on the paper towels and serve right away, with lemon wedges and a little tzatziki.

Recipe video above. Such a great DIY summer spread, a regular all through summer in my circles! It's essentially a lower-cal version of Vietnamese rice paper rolls. The fresh herbs and the peanut sauce are key here! Everything else you can switch: prawns for shredded chicken, pan fried salmon or other fish (flake into big chunks) or even tofu (I pan fry batons). Use whatever shreddable veg you want. Emergency version: store bought roast chicken (shredded) + packet shredded coleslaw veg + peanut sauce + noodles. SO GOOD.
This delicious, pillowy soft Turkish Flatbread is an easy, one-bowl-no-mixer recipe. It's perfect with hummus, tabouli, for wraps and more!
Her satay recipe is unusual and so flavoursome because she marinates the chicken in a sauce similar to the satay sauce which adds so much to the meat. The sauce takes about 10 minutes to cook courtesy of the peanut butter and apart from the fridge time while it marinates, the most time taken is with threading the meat on the skewers. This task usually fell to my grandmother when she lived with us and she'd do it while watching television.

Chicken marinated in cinnamon, cardamom, turmeric, cumin honey and lemon, before roasting, is a gorgeous summery recipe that’s a doddle to make.
A useful, no-hassle, chuck-everything-in-together dish, you don’t even need to brown the chicken (though make sure you sprinkle the skin with sea salt flakes, to help it crisp up). Find a dish that has about the right dimensions, to ensure that it works well. Don’t be afraid of assertive seasoning – rice dishes such as this need it – and don’t skip the step where you wash the rice, or it will end up sticky. A bowl of Greek yogurt is good on the side.
The Chiko roll is iconically Australian and the ingredients are really a mystery to everybody. Here we have tried to capture the flavour so you can have them at home.

Pajeon, which literally translates to green onion/scallion pancakes, are Korean pancakes that can easily be customised to your liking. For my version, I drew inspiration from Haemul Pajeon which are Seafood and Green Onion Pancakes. But of course since this is a vegan pajeon, I used king oyster mushrooms to mimic the texture of squid since it has a rubbery texture. I also added some extra vegetables such as carrot and onion for that extra crunch. I also made my own dipping sauce to pair with this vegan jeon or pancake.

It's also exactly what I need when I've come back in late, having uncharacteristically and disturbingly gone without dinner. For US cup measures, use the toggle at the top of the ingredients list.
Potato pancakes don’t have to be greasy… or hard to make. My recipe is easy thanks to my food processor but you can always grate the potatoes and onion by hand. The secret is to drain off the potato juice but keep the starch. Serve these Polish Placki Kartoflane with a little light sour cream or do like my mother did and slice up the leftover ones and cook into scrambled eggs for breakfast. - Jenny Jones
