I never get cravings for them, but occasionally I would like to have a little edible plate. Isn't that what crackers are really for? There are tons of recipes for dips and sauces, but on SCD if you can't have raw vegetables it leaves few things to actually dip and dive into. One tip when making SCD crackers: Don't be afraid to roll them out very thin, otherwise they don't get as crispy as you may hope, as long as you are using parchment paper, they are not going to stick and break. 2 cups almond flour 1/2 tsp salt 1 Tbsp of oil or butter 1 Large Egg Sea salt for top I also suggest adding some spices like thyme or oregano because these are pretty bland if you are just going to eat these plain. But they turned out wonderful!

Oh sausage. I didn't eat sausage for many years, because between the pepper and the commercial pork, I would feel pretty sick after eating it. I would feel sick with it just cooking actually. But now, I have found a source for pork that is raised properly, allowed to root around on the ground and be happy. So I buy ground pork and make my own sausage. Mmmm... Here is my recipe for polish (?) sausage. 1/2 lb ground pork 1 tsp kosher salt 1/2 tsp garlic 1/2 tsp cumin 1/4 cayenne couple pinches ginger couple pinches pepper Mix all thoroughly with a heavy spoon. (Not the easiest to blend, but so worth it!) Shape into patties (if you make them a little thinner in the center that helps them cook flat instead of football shaped.) Cook on medium heat on cast iron until starting to look cooked through, then flip over to brown on other side. You could probably also cook it in the oven. For italian sausage, use your italian seasoning blend - Margoram, basil, thyme, oregano, rosemary - along with salt and pepper. Use a liberal amount, these are not quite as overpowering as cayenne and cumin can be. You may also like a lot more ginger and pepper than I use - my body just doesn't tolerate more at this point. Serve up with eggs and squash cakes and lots of butter :)

After sifting through various SCD-ketchup recipes I found that most take hours to boil down tomato juice or just whole tomatoes into paste. Elaine Gottschall said that canned tomato paste from the store is illegal. However I stumbled upon this recipe from My Cranky Gut, I decided to try it. I believe that the food list in BTVC is somewhat outdated. Foods that are available now are vastly different than what was on the shelves 40 years ago. I will concur that most of them are worse now for us, but there has been a large movement toward whole and organic foods, and new "real" foods have been discovered since (i.e. Stevia) so some changes have been made for the better. So while shopping for homemade ketchup ingredients at the grocer, I carefully read all of the ingredients on the label, and even took the time to call the manufacture of the tomato paste I selected. Unfortunately, they did not have any organic tomato paste, but here is sort of how the phone call went to Contadina: "Hi I have a question about one of your products." "Sure, go ahead." "I bought a can of the tomato paste, however, I have several food allergies. The only ingredient listed on the can is 'tomatoes'. Are there any other ingredients in this at all, whatsoever?" "The tomato paste, correct?" "Yes." "Yes, that is right, the only ingredient is tomatoes. They're just pure tomatoes, boiled down, and boiled down again, until it comes out into that paste." "Thank you." They were actually one of the friendliest companies I have yet to actually give a call or write an email to. And when I looked at, smelled, and finally tasted the product I tend to believe they are telling the truth. When I eat something illegal I can tell right away, as I start feeling terrible within minutes. But I ate this hours ago and I feel completely fine, more than that, my taste buds are happy. In any case, I don't blame you if you chose to still avoid tomato paste from a can, but this is my adaptation of a quick and easy homemade ketchup recipe: 1 small can tomato paste 2 Tbps. white vinegar 1 tsp garlic powder 1/4 cup honey Mix well and refrigerate. It's really that simple.

I am excited about this recipe! I have tried so many different savory SCD sandwich breads and been disappointed with the nuttiness every time. Not one bread spoke to me and said "Turkey and Mayo please!" So I was trying to think of another ingredient I could use in place of nuts or nut butters. Bean paste came to mind so I decided to give it a whirl. Unfortunately, My bread fell because I took it out too soon... BUT! It's the closest texture and flavor to white sandwich bread I have tried yet :) The bread has the slightest spongy density from the egg whites, and the egg whites flavor is in the crust but not inside. I am excited to try the next batch and perfect it. I am still learning the science behind baking :) This SCD White Bean Sandwhich Bread is Gluten-free, Grain Free, Yeast Free, refined sugar free, and lactose free. *Revised 8/2/12 * 1 3/4 Cup White Beans, Soaked 24 hours, cooked, pureed with a little water added for smooth consistency 6 Eggs, Seperated 1 Cup Almond Meal 2 1/2 tsp Honey 3 tsp Apple Cider Vinager 1 1/2 tsp Baking Soda 1 1/2 tsp Salt Preheat Oven to 300* Puree white beans in food processor adding a little water to achieve a smooth thick consistency. Add the Beans, Egg yolks, Honey, and Vinegar to Food Processor. In a separate bowl beat the Egg Whites until stiff peaks form and set aside. Combine dry ingredients separately and then add to bean mixture (I use an electric hand mixture to get the batter as smooth as possible). Once well mixed fold in the Egg Whites by hand until just blended (Do not over mix or the egg whites will fall.) Poor in a parchment lined Loaf Dish and bake for 1 hour 30 minutes. Don't even peak at it until at least an hour 10 minutes have passed. The crust should be firm. The bread will be nice and brown, pictures coming soon. *I baked this loaf for 45 minutes and it was just a tad too soon, but I will still enjoy a tuna fish sandwich on it tomorrow! ;)

Low carb, Whole30 friendly spin on chicken & broccoli casserole
Best. Thing. Ever. This adaptation from the Urban Poser came about simply because I am cheap and slightly lazy in the kitchen. Parchment paper is expensive, and when you work with almond flour the consistency is completely different than wheat flour, it's really not workable at all. Therefore rolling the dough out just didn't appeal to me. I can mix simple cake batters and pour it into pans all day long just to pop it in the oven and -boom- finished product. But to have to roll, and then mix separately, and then spread out on parchment paper, and then roll again, and then cut, and then place, and then finally bake- I've done that before and I honestly didn't like it. So, me, wanting all of the flavor and none of the work decided to put my own spin on cinnamon rolls. Instead of rolling the dough up and slicing into individual servings this is more of a cinnamon roll cake of sorts. Wow, did it deliver! The top was perfectly brown and the inside was gooey and soft. Perfect for the Paleo sweet tooth. Ingredients: "Rolls": 2 cups almond flour 1 tsp baking soda 1/2 tsp salt 1/4 cup oil (I used coconut oil) 2 Tbsp honey 2 large eggs, room temperature 1 Tbsp cinnamon 1 dash allspice or nutmeg Filling: Healthy dousing of cinnamon (I'd say about 4 Tbsp but I don't measure) Healthy drizzle of honey (again, I don't measure but enough to cover across the pan in a thin stream 1/3 cup raisins Frosting: 2:1 ratio of Greek-strained yogurt to honey (1/4 cup each, try, & make sure yogurt is dripped for at least 12 hours) *For dairy-free/Paleo use 2:1 ratio of coconut cream concentrate (aka coconut butter) to honey. Directions: Mix all the roll ingredients together in a bowl. Spoon 1/2 of the batter into baking dish, I used a 9 x 9 glass dish. Then using the cinnamon you have for the filling, generously coat the entire batter over the top with a thin blanket of spice. (FYI my cinnamon is not very strong, I am pretty sure I have to use about 5 times the normal person to get the same flavor out of it, if you have good, strong tasting cinnamon I would say to just dash the top of the filling in the pan instead of blanketing it.) Then drizzle honey all over the cinnamon, it will probably bead up like water hitting oil but that's ok, just make your way around the pan anyway. Drop raisins across the top of the mixture. Then add the rest of the batter on top, trying to evenly spread it so that it bakes evenly. Place in the oven at 350 degrees for 10 to 15 minutes. PLEASE watch this carefully, as soon as the top gets to browning, it's done. Way better to have this undercooked than over, as it will turn into a hard, nasty brick. Let cool. Mix honey and yogurt together, spread on top of cooled roll-cake. EAT. By the way, this is my 100th post! Yay! I honestly was not sure what would become of this blog when I started it last year, but thanks to all my regular readers & Vitamix shoppers, I can say it is a success! THANK YOU! (yes, you!)
