麵食中我最喜歡餛飩,麵皮柔軟內餡豐富,怎麼都 吃不膩。只要有時間我就會多準備一些,放冰箱冷 凍儲存著,隨時想吃就可以下鍋烹煮,非常方便。 鮮蝦餛飩 份量 : 約64個 材料 : *餛飩皮(約7*7cm)300g 餡料 : 青蔥1支 薑2片 豬絞肉350g 雞蛋1個(約55g) 太白粉1大匙 水1大匙 蝦仁100g 調味料 : 米酒1大匙 醬油1大匙 蠔油1大匙 鹽1/4茶匙 白胡椒粉1/8茶匙 步驟 : 1.青蔥及薑切小塊,蝦仁加1茶匙米酒(份量外)混合均勻備用 2.將豬絞肉、雞蛋、太白粉、水及所有調味料放入食物調理機中 3.攪拌1-2分中至細膩的泥狀 4.蝦仁切小塊,混入肉泥中即完成內餡 *若沒有食物調理機,可以將絞肉剁至有黏性,蔥薑剁碎再加 入所有調味料混合均勻 5.餛飩皮中央放上適量肉餡,對折成三角型 6.將左右麵皮往下方折,收口捏緊 (若覺得太乾會散開,餛飩皮可以抹一點水) 7.水煮沸,將適量餛飩放入 8.煮至餛飩浮起即是熟了,撈起放入喜愛的高湯中即可 *若是煮冷凍餛飩,不需解凍直接放入沸水中,水滾再加 100ml 水,煮至浮起即可 9.包好的餛飩整齊排放在盤子上(勿重疊) 10.整盤放入冰箱冷凍室1-2小時,冷凍至硬 11.一顆一顆拿起來放入塑膠袋中,密封冷凍 補充: 1.調味料份量請依照個人喜好斟酌 *此食譜使用食物調理機機型 : 王電廚中寶果菜料理機 WO-2688
